Gluten Free Dairy Free Blueberry Waffles
Gluten Free Dairy Free Blueberry Waffles are a wonderful breakfast treat for that special Valentine in your life. And, if your Valentine also has an egg allergy, you are in luck! These waffles are gluten free, dairy free, egg free and vegan. All that, and yummy, too. Yay!
One thing that I do want to mention is that these waffles are also oil free, and depending on your waffle iron, that means they could really stick. Be sure to generously oil your waffle maker before pouring on your batter and let them cook through completely. Don’t have a waffle iron? Make these as pancakes and enjoy!
Gluten Free Dairy Free Blueberry Waffles

Ingredients:
- 1 3/4 cups hot water
- 1/2 cup finely ground flaxseed (I use golden flax)
- 1/2 cup potato flour
- 2 cups rice flour, finely ground
- 2 teaspoons gluten free baking powder
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1 3/4 cup coconut milk, carton not canned
- 2 tablespoons honey
- 1 cup fresh blueberries, or frozen (do not thaw before adding to batter)
Directions:
Mix the ground flax seed with the hot water in a bowl, and let the mixture sit for 5 minutes until thickened. Whisk together the rice flour, potato flour, baking powder, baking soda, and salt in another bowl. Set aside. Blend the coconut milk with the honey and then add to the flax seeds mixture. Stir well. Put the dry ingredients into the wet ingredients and mix until the batter looses the bulk of its bumps. Add the blueberries and fold them in gently with a spatula.
Grease both sides of the waffle iron with a little oil and pour some of the batter (1/3 cup) into the center of the iron. Close the top and cook until brown or according to the manufacturer’s directions. Serve with syrup if desired.
Freezing Directions:
Allow waffles to cool completely. Place waffles into a zip-seal freezer bag, separated by waxed paper. Remove as much air as possible, seal, label, and freeze. To serve: Toast waffles until heated through.

Just found your recipe for the waffles…I am looking forward to making them to have on hand for my little two year old grandson…he is completely dairy free because of allergies…this will rank high with the little carb munchkin!
My 3 year old and 4 year old LOVE these and the Spiced Apple Pancakes from a few months ago. I keep both on hand in my freezer, SO much better then Eggos!
