Gluten Free Dairy Free Chewy Chocolate Chip Granola Bars

My kids really like portable breakfasts, especially the teens in my house.  Granola bars are perfect for breakfast-on-the-go or for an after school snack.  Because you make these Gluten Free Dairy Free Chewy Chocolate Chip Granola Bars yourself, you can control what is in them and you can be sure they are gluten free and dairy free.

I found that you have to be sure the Gluten Free Dairy Free Chewy Chocolate Chip Granola Bars need to be completely golden in order to ensure they are cooked enough to hold together.  Another tip is to be sure to cool the bars completely before cutting so they set up and cut cleanly.  I have made these both with the gluten and dairy free margarine, as in the recipe, and another recipe with 1/3 cup coconut oil.  Both worked really well, so use coconut oil if you prefer that ingredient.  If you like your gluten free dairy free granola bars more crispy, try the fruit filled version I posted a few months ago.

Gluten Free Dairy Free Chewy Chocolate Chip Granola Bars

Ingredients:

  • 2 1/2 cups certified gluten free rolled oats
  • 1/2 cup gluten free crispy rice cereal
  • 1/2 cup gluten and dairy free chocolate chips
  • 1/2 cup brown sugar
  • 1/2 cup gluten and dairy free margarine (or 1/3 cup coconut oil)
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup honey
  • 1/2 teaspoon salt

Directions:

Using a large bowl, mix all ingredients well until combined. I found it was easiest to just mix with my hands until well blended.  Press into a 9″” x 13″” pan(s) lined with parchment paper.  Bake at 350° for 18-20 minutes. Cool for 10 minutes and score into bars (basically marking where you will cut later). Let it set completely before you cut into bars.

Freezing Directions:

Put bars into freezer bag(s), separated by waxed paper.  Remove as much air as possible, seal, label and freeze.

    These are the closest things to store bought granola bars I’ve tried. Great recipe! I’m going to cut down on the sugar so it’s a little healthier, but thank you SO much for a great go-to recipe!

    My kids LOVE these! We just became a gluten/dairy free home and these are a godsend. I followed the recipe exactly this time and they are very sweet. Next time I will use 1/4 c sugar and 1/4 c honey.

    These were good, even with less brown sugar. I baked them a little long, so they didn’t hold together as well. I found they were way to thin for a 13×9, and wish I had done them in a square pan. The crumbles were great over strawberries & ice cream though…. :-)
