Gluten Free Dairy Free Chicken and Rice

This is truly a one dish dinner. It has vegetables, rice and meat which makes it a very filling dinner. We eat chicken and rice often, but this was a nice variation from the traditional creamy chicken and rice dishes.
Gluten Free Dairy Free Chicken & Rice

Ingredients:
- 2 Tablespoons olive oil
- 1 clove garlic, minced
- 1 pound chicken, cut into chunks
- 1 link gluten free dairy free chorizo, sliced
- 1 carrot, sliced
- 2 Tablespoons tomato paste
- .12 teaspoons salt
- .12 teaspoons pepper
- 3 cups gluten free dairy free beef stock
- 1 cup sweet peas
- 1.5 cups rice
Directions:
Preheat oven to 350 degrees. Put olive oil in a large skillet and saute garlic. Add chicken and brown each side, then add chorizo and carrots. Cook for around 5 minutes and then add tomato paste, salt, pepper and beef stock. Cover and simmer for 30 minutes. If more liquid is needed, add more stock or a small amount of water. Add peas and rice and cook until rice is done. Place contents in 9×13 pan and cook for about 20-25 minutes at 350 degrees.
Freezing Directions:
Freeze before cooking in oven, cover with foil and affix label. To serve: Thaw. Remove cover and and cook in 350 degree oven for 20-25 minutes or until heated through. If more liquid is needed, add additional water or beef stock.

Do you have a name brand or idea where I can look for the chorizo? I live in Southern Arizona so we have lots of Mexican style chorizo-not the choppable Spanish style chorizo. Also, the closest Whole Foods t Trader Joes is 1.5-2 hours away. Thanks
I use the Boar’s Head brand, which is carried in a local supermarket. Hans All Natural Sausages are also fine. If you are unable to locate Chorizo, any type of smoked sausage would be a good substitute.
