Gluten Free Dairy Free Cinnamon Apple Muffins

My kids really enjoyed these muffins for breakfast.  And with the healthy ingredients used to make Gluten Free Dairy Free Cinnamon Apple Muffins, I feel good about giving them to my kiddos to start their day.  I hope you enjoy them as much as we did!

Gluten Free Dairy Free Cinnamon Apple Muffins

Ingredients:

  • 1/2 cup quinoa flour
  • 3/4 cup sorghum flour
  • 3/4 cup tapioca starch
  • 2 teaspoons gluten free baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup gluten & dairy free plain yogurt or sour cream replacement
  • 1/3 cup oil
  • 3/4 cup brown sugar
  • 2 teaspoon gluten free vanilla extract
  • 2 medium eggs
  • 1 1/2 cups apple, finely chopped
  • 1/2 cup chopped walnuts

Directions:

Preheat 350 degrees F.  Line muffin tin with paper liners.  Set aside.

Whisk together dry ingredients.  Stir in wet ingredients until blended, then stir in apples and nuts.  Put about 1/3 cup batter in each muffin cup.  Bake muffins at 350 degrees F for 20 minutes or until done.

Freezing Directions:

After cooling muffins on a cooling rack, divide muffins between the indicated number of freezer bags. Remove as much air as possible, seal, label and freeze.

To serve:  Thaw. Eat at room temperature or warmed through.

Servings:  12

    Can I make quinoa flour by just grinding the quinoa seeds up to a powder?

      Yes, you can! I use a cheep coffee grinder to grind small amounts at a time. Be sure to use a washed quinoa seed, however, or it will not taste very good. If you have unwashed quinoa, rinse well, then allow to dry before grinding. I put rinsed quinoa on a clean kitchen towel on a jelly roll pan in a thin layer to dry. Hope that helps!

    There is a typo on the recipe…. lists baking powder twice. thankfully I figured it was soda and it worked! :) Awesome muffins! I subbed brown rice flour for the quinoa flour (didn’t have any) and they were d’lish! thanks for passing along!

    These sound yummy, but we are not DFGF in our house and on a thin budget. How could I adapt these for us? I’m thinking I need to replace the sorhgum and tapioca flours and the xantham gum. I just don’t know what to sub in.
