Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:
- Melissa Hale:I am a happily married mother of three children. One of my children has been diagnosed with autism and has greatly benefited from a gluten and dairy free diet. I love that cooking allows me to give her the chance to enjoy a large variety of foods that she normally would not be able to have due to either the expense of specialty meals, or the inability to find a large variety of safe foods at the store. Our whole family follows the diet most of the time to support her.
- Jami Palmgren:I am a wife and mother to a teen and 2 tweens. I recently left the workforce to have more time at home with my kids. I’ve been once-a-month cooking in some form or another for 15 years and can’t imagine running my kitchen any other way.

I test cooked this menu and it is my family’s favorite so far. It was easy to prepare; had a good variety of flavors; and was very economical. We’ve tried almost everything and haven’t found one that was disappointing. Great job!
This menu looks awesome. More kid and picky eater friendly!
The creamy chicken toquitos aren’t dairy or gluten free.

I can’t get the link to the recipe cards to work. Anyone else having this problem?
Nevermind, it eventually worked.
I had issues with the amount of carrots, cilantro and onions. I think the chicken taquitos recipe calls for waaay more cilantro than it should. I am just going to freeze the carrots & onions for another month or for serving, so it works out. I might freeze the cilantro for Jan 2013 too. The kids are loving the cornbread/smokies thing (can’t recall the name). Oh, I got a lot more of the cornbread smokies recipe than it said, but that’s a good thing here.
Julie I’ll take a look at those quantities, but yes they are all easily freezable for your next cooking day!
I am usually a month behind, So I am about to do the December menu. I noticed a mistake in the files. for the Banana Cinnamon Muffins, both on the grocery list and the recipe cards, the ingredients amount stay the same regardless of the number of serving you enter on the yellow box.
There is a reason for that related to the eggs needed for muffins – it is a “ceiling” formula. It is right though. . .we promise.
