Gluten Free Dairy Free February 2012 Menu

The Gluten Free Dairy Free February 2012 Menu contains a month’s worth of delicious, family-pleasing, meals to make ahead so that you’re ready for whatever your month has in store.  The menu takes advantage of the seasonal produce and grocery sales in the month of February.

There a lot of tasty treats on this month’s menu!  Raspberries are just beginning to come into season, as well as delicious broccoli. We are still in the heart of the cold winter months (at least in most places) so there is  some winter comfort foods to help keep you toasty.  As some are preparing for Lent (which starts later on in February) there is also a tilapia recipe.  If you don’t care for tilapia substitute chicken, making sure to adjust the cooking time, as it will be much longer for chicken.  Enjoy!

  • The Gluten Free Dairy Free menu is designed for you to enter the NUMBER OF PEOPLE you are cooking for. The menu will yield you approximately 6-10 breakfasts, 8 lunches and 16 dinners. Throughout the month you will be eating each entree 2 times. No, this is not enough to feed you for every meal, but it should be enough to get you most of the way, after all, we still do eat out or eat with friends on occasion. If you are willing to eat the same meals up to 4 times each month (lunches and dinners) you can double the number of people that you are cooking for and you will get the quantities needed for each. These labels are designed to be printed on Avery 8163 or equivalent! Readers who didn’t have labels available suggested just printing them on paper and taping them.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Melissa Hale- I am a mother to three active daughters and married to a husband who works and goes to school full-time.  I love the flexibility that Once a Month cooking does for our family, especially a family that deals with food sensitivities where we need quick on the go meals that are free of allergens.  I keep track of most of my families adventures at mommyhale.blogspot.com.
  • Erin Freel-  I’m the busy mom of two boys with celiac disease.  I graduated from the Air Force Academy with a degree in political science and general engineering, and I am now earning my master’s in mommy hood!

    Hi, I am new here and can’t wait to get started! After changing the number of servings to 4 the shopping list says 5 lbs of chicken and the list before the recipe cards says 10 lbs. I think the shopping list is right after trying to go through the recipes but not absolutely sure :-) THANKS

      You are correct, that grocery list appears to have been wrong. I made the change. Thanks for helping others out. I won’t promise there aren’t other discrepancies but they do go through quite a process before going to press.

    My husband and I are just starting GF cooking. It’s definitely a big hit adjustment to make in our food budget. However, I did find that I can order all of the GF flours, etc through Amazon on their subscription program, and you get a 15% discount. Just an example, I got a box with 4- 22oz bags of Bob’s Red Mill Sorghum flour for $10.40. The other great thing is that shipping is free on subscription and you choose how often you want to receive a shipment. Just thought I’d share. I was shocked at the cost of those flours in the grocery store when I started looking. Hope that helps a few people out!

    I’m confused about the taco casserole that’s featured here, it has cheddar cheese. Are the recipes either gluten OR dairy free and not both? I know you could substitute a “vegan cheese” for it but now I am worried about hidden dairy in the recipes. I had to eliminate dairy for my son’s reflux, so I was excited to try these menus, now I’m not sure what on them I can have?

      Chances are that recipe link is to a recipe that we have adapted in the recipe cards. For full adaptions and freezer directions you will want to click on and access the PRINTABLE RECIPE CARDS. These links are to the original recipes to give those bloggers recognition and so you can see the recipe.

    Thank you so much for all your hard work you put into this website. We did this for our first time in March and it has been both a time and moneysaver. The recipes have been delicious and I have been recommending this website to all my friends and family! My son has dairy sensitivity only, so I substituted regular flour for the gluten-free flours.
    Our family loves the pizza muffins – I am going to try them with sausage next time, and I found that leaving out the pizza sauce gave a better consistency. We serve them with tomato sauce on the side.
