Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Jami Palmgren:   I am a wife and mother to a teen and 2 tweens. I recently left the workforce to have more time at home with my kids. I’ve been once-a-month cooking in some form or another for 15 years and can’t imagine running my kitchen any other way.

Get Started

    Love Tater Tot Casserole, been making it for years! Once on a big family vacation I made this for everyone. My sis-in-law was like,”There’s no way my picky kids are going to eat that”. Well, they inhaled it! It’s my go-to dish for emergency “friends in need” dinners too. I have never met anyone who tried it and didn’t like it! I always go for the cream of celery or chicken.

    I know you can get GF oats, but we have an oat allergy in addition to gluten, so I’m a little bummed that all three breakfast items have oats in them!

      I’m sorry to hear that Jessica! In the snap crackle pop bites, eliminate the oats and just increase the rice cereal. In both the oatmeal banana muffins and the gluten free granola, I would recommend sunflower/ pumpkin seeds or coconut/ quinoa flakes. I think these would be comparable. I hope this helps to make these recipes work for your family.

    The bell pepper measurements were different in three places. The shopping list said but 6, so I did, then the prep sheet said 63 cups!!! And when I look through the recipes I see 9 cups in the meatloaf.

    I am excited to try some of these recipes and appreciate all your hard work. I’d just like to point out one thing. In the tater tot link, the recipe calls for some condensed soups, any condensed soup I have come across has always had wheat in it.

      Welcome Brandy! The link shows you the inspiration for the recipe, unless we did a post on our own website and then it links you to our adaptation. The recipe card will show you the gluten free dairy free adaptation. We have a link on our website about how to make your own cream of anything soup, and there is a way to make it GFDF.

    I made the chicken and spinach meal and my pasta turned to mush! It says cooked on the recipe. Should the pasta be uncooked? This has happened with another recipe as well. Can you give me any tips? I would appreciate it. Thank you!

      Hi Kristen. I’m sorry to hear that! It is that so hard with the variety of gluten free pastas available to know exactly how each one will do when mixed with other ingredients. You could try it uncooked in the future or if you want to cook it separately and add it on the serving day.

    I am in the middle of my big cooking day and have run into an issue. The pizza muffins instructions say to follow package directions and prepare biscuits….does this mean to cook the biscuits or to prepare the dough and use that? Also there are ingredients required for making the biscuits that were not included in the shopping list. It also says to double the batch but the recipe as a whole only calls for 16oz of bisquick (1 box), a double batch requires 4 cups (2 boxes).

    This is my 2nd month and I’m finding it increasingly frustrating. I’ve already spent 2 hours finding and fixing mistakes before my shopping trip and now I get to make another trip to the store in the middle of my big cooking day. ARGH!!!!!!

      Austin, sorry for your frustrations. Yes you are to prepare the dough per the instructions on the box for biscuits. I think you just need to add your non-dairy milk of preference. I will note that the non-dairy milk is not included in the cards or grocery list. I believe that’s the only ingredient you need though. The double the batch has been eliminated it should not have been in there. The amount specified in the card is correct. If you have additional errors, please email me at kelly at onceamonthmom.com. We take these comments very seriously and will do whatever we can to correct them to prevent future issues.

    I have ebb even thinking about subscribing but I just went to one link (cjicken and spinach) and 8 hate the thought of using prepared pasta sauce. :( I cook mostly from scratch and was looking for a way to make that easier but I don’t want easier to be prepared.

    Some of these recipes call for cheese – definitely not dairy free.

      If you are clicking the links-those are giving you the recipes from which we gained the inspiration. It doesn’t give you the adaptations we have made. Those are in the recipe cards.
