Gluten Free Dairy Free Ham Cups
We just moved into our new house, and my parents came to visit and see our new place. It was such fun to think and plan a few meals that I could fix in my new kitchen! I needed to find something that would require minimal prep and dishes (since we still aren’t 100% unpacked!) and yet would still wow them with the taste! Let me introduce you to Ham Cups! These delicious breakfast treats are naturally gluten free and are packed with flavor and protein! If you don’t care for dairy free cheese, you can simply omit it.
Gluten Free Dairy Free Ham Cups

Ingredients:
- nonstick cooking spray
- 12 slices gluten free deli ham, medium thickness
- 8 ounces frozen potatoes O’Brien
- 2 Tablespoons dairy free butter
- 1 cup dairy free cheddar cheese, shredded
- 6 medium eggs or egg substitute
- 2 Tablespoons dairy free milk
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup green onions, chopped
Directions:
Preheat the oven to 350 degrees. Spray the muffin pan with nonstick cooking spray. Line with ham slices. Place frozen potatoes and butter in microwaveable bowl. Microwave for 2 minutes. Place in ham lined muffin tin. Sprinkle cheese on top. In a small bowl, combine eggs, milk, salt and pepper. Beat with a fork. Pour egg mixture over potatoes and cheese. Sprinkle with green onions. Bake for 20-25 minutes.
Freezing Directions:
Prepare as directed above, then flash freeze in a single layer on a cookie sheet. Place in a gallon size freezer bag. Remove as much air as possible, label & seal. TO SERVE: Thaw. Heat through in microwave.
