Gluten Free Dairy Free Teriyaki Burgers

Summer is in full swing.  Woo-hoo!  The Gluten Free Dairy Free July 2012 Menu is filled with easy to serve meals to cut down on your time (and heat!) in the kitchen.  During July we see a lot of different grill meats on sale and berries of all kinds, so be sure to stock up while you can.  Blueberries, melons, garlic, green beans, grapes, limes and nectarines are all in peak season with tomatoes and summer squash starting to to arrive at your local farmer’s market.  The menu takes advantage of the great summer produce and sale items that are in your stores and markets during the month of July.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Lora Collins – I am a criminal defense lawyer and stepmother to a 16 year old girl and two boys ages 8 and 10.  We stay busy with cheerleading, boy scouts, baseball and soccer and enjoy freezer meals to have dinner on the table during busy days.

Get Started

Are you new to Once A Month Mom or once a month cooking (oamc) in general? If so, you might want to spend a few minutes (or hours) on the Get Started Series. If you are in a real hurry to catch on we have written some simple steps for getting started. Welcome!

    I tried to go to the link for the Chili-Lime Chicken Kabobs but it sends me to the Slow Cooker Chicken Cacciatore recipe instead. I’d love to see the recipe.

    In the Pina Colada Smoothie the OAMM recipe calls for 3 cups of milk but the original recipe calls for 3/4 cup per serving. When I input I am cooking for 4 everything increased for 8 servings except for the coconut milk and the pineapple juice which only increased to 3 cups which is half of the 6 cups it would take for 8 servings. Am I doing mymath right or did OAMM have a reason for the decrease in milk and pineapple juice? I know the recipe also calls for bananas which the other did not but itseems the bananas would not make up for the decrease in both liquids or am I mistaken? (I did notice the sugar is decreased as well but as a dibetic that is fine with me.. I will use Agave)

      Diane, the original version calls for 3/4 cup per 2 servings, not one serving. The calculations and portion sizes on this card are correct, I double checked.

    On the recipe for gluten/dairy free zucchini chocolate muffins there is no temperature given for baking. Should I assume 350?

    I am new to many of these ingredients, so please excuse this question if it seems elementary. The Almond Banana Blueberry Muffin recipe calls for Tapioca Starch, whereas the Zucchini, Ham, and Corn Muffin recipe and Zucchini Fritter recipe both call for Tapioca Flour. Are these two separate ingredients, or is one or the other a typo?

      Tapioca starch and tapioca flour are the same ingredient and can be used interchangeably. Different companies market it under both names and different recipe bloggers call for one or the other in their recipes. Use which ever type you have. Hope that helps! :)

    This is the first time I am trying this out and because I live in the UK I need to convert the grocery list to metric. When I am looking at the oils, is the measurement “ounces” as in weight or “ounces” as in fluid ounces, ie. volume?

    The food looks amazing, thanks for putting this together!

    Thank you, thank you, thank you!!! I just started working full time again and needed an easy solution for meal time. Couple that with the fact that, due to medical issues, we are a ‘free’ family: gluten free, dairy free, artificial color/flavor/sweetener free, dye free, allergen free (peanuts, hazelnuts, carrots, honey, tarragon, tofu, red chili pepper, basmati rice, cabbage and brussel sprouts). As you can imagine trying to fit all of those restrictions AND come up with a healthy menu can be quite taxing. Not anymore, thanks to you. My whole family has loved all the recipes and I am loving being able to get dinner on the table with no fuss. Thanks for being the solution I was looking for AND thanks so much for being FREE. I’ll be bragging about you on facebook for sure! Thank you, thank you, thank you. And BTW, your consolidated shopping list is fan-tabulous. I am so grateful !!!!

    I’m noticing a weird phenomenon…when I view the Gluten Free recipe cards and sign in, suddenly all the menu areas are greyed out and it only says “view only.” I can’t change anything, including in the yellow box. Is there any way to download or save a copy so I can alter it for food allergies?

    hmm… also…i just clicked on the individual recipe for the Green Chili Taco Salad, cause that is the place where I found out I needed more peppers and OAMM’s recipe cards say to use green peppers but the blog post said sweet peppers? Maybe that is the problem? Except I used the 2.32 sweet peppers calculated for the Grilled Balsamic Veggies and Chicken Cacciatore recipes…..???

    I’m loving the concept of bulk cooking, and loving the dairy free menu!

    Obviously your summer is our winter, so I was wondering if you would suggest we do the meals for the current month, or 6 months ago?

      I suggest 6 months ago when you are on the other side of the world. Welcome, by the way! We have a lot of Aussie’s that frequent here so you are in good company. We should start an Aussie thread on FB, I am sure our FB fans would have some suggestions on what they do.
