Gluten Free Dairy Free Apricot Muffins with Almond Streusel

Summer is here!  I am thrilled that it is time for summer vacation and cooking outside.  The Gluten Free Dairy Free June 2012 Menu contains a month’s worth of delicious meals to make ahead of time so that you are ready for whatever your summer has in store.  The menu takes advantage of seasonal produce and grocery sales in available in the month of June.  This menu also has plenty of easy to assemble mix-and-freeze recipes so that you don’t need to spend too much time in the kitchen on your big cooking day and can get back outside to play.

Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

  • Sarah Baker – I’m a work-at-home-mom to 3 kids ages 5, 6, and 7 currently. I am a Thirty-One independent consultant and run my own marketing consultation business. I have an obsession with cookbooks and cooking. I am on the PTA board and am seeking a position on the state PTA board this summer as well. I am the only one in my family with Celiac.   • Heidi Fluegel – I am a stay-at-home mom with 3 kiddos: a 5-year-old boy, a 2 1/2-year-old boy, and a 8-month-old baby girl. I love to cook and bake healthy food for my family. I am also a contributor to a blog called Bad Mommy, No Cookie :)

Get Started

    Heads up on this Menu…the spinach tomato quiche in the recipe cards calls for 3 cups of cherry tomatoes it should be 5-6 cherry tomatoes per pie.

    Love the menu. Keep it coming.

    THANK YOU so much for this website. I have recently been diagnosed with Celiac Disease so this website is a true life saver. I just bought my groceries so now I’m ready to cook and stock mt fridge. It’s gonna be cool also because at the end of this month I’ll be moving into a new apartment. I’m excited!!     First – thank you for having a truly dairy free monthly menu! This will help with menu planning around my 5 year old’s dairy allergy!

    Second – when I was looking at the grocery list vs. the prep list for the veggies, the amounts were not the same, despite putting in the same number of servings on each. Which is right – the grocery or prep list?

      Jessica, can you help me with what amounts specifically are off? They should be the same.

        Carrots – on prep list 8 medium, on grocery list 3 medium
        Green onions – prep list 16 medium, grocery list 8 medium
        Kale – prep list 3 pounds, grocery list 16 bunches
        Red Bell Pepper – prep list 4 medium, grocery 2 medium.

        I am not sure if that is all, but there is a sampling. If there is a place to send my spreadsheets to, I can do that as well.

          I fixed the Kale, the others are related to a formula because they are in recipes with eggs. Can you tell me how many people you are setting the serving amount to? That will help me pinpoint exactly if it is incorrect or not. Sorry!

    i don’t know if you noticed, but the quinoa cakes recipe is not dairy free. they look great, of course, but i wanted to point that out in case you hadn’t noticed.

Yes, the original recipe for the quinoa cakes is not dairy free, however, I adapt each recipe as needed to be gluten and dairy free for the recipe cards, instructions and grocery list for the gluten and dairy free menu each month. So you can cook with confidence! :) Thanks for checking; I know you can’t ever be too careful when it comes to cooking for yourself or your family. Let me know if you have more questions.

  11. Any chance there will be some mini menus for gluten-free? We don’t have central AC (and no AC in the kitchen) and are about to hit our triple digits, so the thought of spending an entire day in the kitchen is scaring me a bit.

    I put 8 in as the number I am feeding for this month because I wanted multiples of some of the recipes to feed others. When I looked at the quiche recipe it said I needed 24 cups of tomatoes!!! Hahaha! I’d have toplant bushes to make this :)of course I only needed 24 tomatoes.
