Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:
- Jamie Wilson – I am a stay at home mom of a 4 year old daughter and a 3 year old foster son. I depend on freezer meals because my husband works in law enforcement and his schedule can be very unpredictable. Between that, the kid’s activities, and my own volunteer work with the Junior League cooking isn’t always easy but eating well always is. I just found your website a few weeks ago, and this is just what I need! It is so hard cooking ahead for a dairy and gluten free diet. Most freezer recipes are things like lasagna–and we just don’t like the fake cheeses. I tried the March menu plan, and am very pleased with the results. I cooked for 8 because I wanted enough meals to actually last me a month for my family of 4. It ended up being a bigger undertaking than I thought so I will only cook for 4 from here on out. I had two helpers chopping, and we chopped and prepped for 3 hours at least the night before. I cooked and chopped by myself the next day for about 13 hours. I’m not a great cook–so I don’t always have it together to do more than one thing at a time–so better cooks can probably do this faster. I also had to dishes repeatedly because I didn’t have enough big bowls. I really could have used a helper on day 2 just for dishes and packaging.
I ended up going ahead and baking my meatloaves (I substitued deer because I had it on hand–really ended up being tasty)–probably should have waited–they crumbled when I prepped for freezing. I also had to turn the chicken buffalo burgers into meatloaves because they were too wet to form into burgers–too much liquid in the recipe (maybe I did something wrong–I ended up using an extra package of ground chicken in them and some oatmeal to dry them out and still had to make loaves). I baked them as well–and they held together better than the deer loaves–turkey might have held together better to pre-bake than deer since the chicken held up better.
I subbed my flour mixure in the muffin recipes instead of using the flours you recommended (to save money) and they turned out great– I use a recipe I found in a baking cookbook that works great to sub for wheat flour almost anytime. It utilizes brown rice flour, potato starch and tapioca starch in the mix.
I’ve tried freezer cooking before from plans, but never gluten free dairy free. I received better reviews from the family from the results of this plan than I have ever had on any of my cooking ventures from internet recipes. I tasted everything I cooked as I went, and everything was very good (even if I had to make loaves instead of burgers). The recipes were very simple to follow as well. Please, keep coming with new plans. You are doing a great job! The breakfast recipes were all a hit, and that is a tough market for gluten free/dairy free.
The only other issue I had was that I had not chopped or bought enough carrots and celery (bought what you suggested)–but had way too many onions and sweet potatoes chopped (didn’t buy as many as you suggested. I will just have to make sure I measure out enough for each recipe before I start cooking next time. All in all though, I was very pleased with the results. I will be downloading your future menus for sure. Thank you!!! I will also probably add some of these recipes to my usual repertoire of just family night cooking and only cook for 1 or 2 in those cases.

I am SO glad I found this site! I was looking for freezer meals for my family but when I found the GF/DF meals, I got even more excited. My GF/DF friend is due with her 2nd child this summer. I can’t wait to fill her freezer with meals that she can actually eat and that she won’t have to try to make with a toddler and a newborn needing her attention.
