Test Cooks

Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! If you are interested in test cook, feel free to volunteer. Here is a little bit about this month’s test cooks:

    I am so happy to see this posted now :) We have been enjoying this particular set of recipes since our test cooking day – and all I can say is YUM! We can’t pick our favorite because they are all so delicious!

    Happy Wednesday! I’m preparing my shopping list and noted that Chicken was listed on the list. However, it isn’t more specific on what cut of chicken (breast, leg, thigh, etc). I could piece through the recipes, but I didn’t know if you at least had a percentage of the different cuts in mind. Thanks!

    First time checking things out here…and cannot understand why two of the recipes I have looked at so far in this section BOTH contain gluten and dairy????/ Are there altered recipes than what these linked to once you are a member? Right now I cannot imagine paying for a service to get recipes that our family cannot enjoy. Am I missing something? I am referring to the baked meatballs for lunch and the chicken parm for dinner. And I am in the GF/DF section!

      They have gluten and dairy in them if you are clicking from the links as this is only the INSPIRATION and source of the recipes utilized. Once you become a member (http://onceamonthmom.com/membership/join/) you get access to all the documents where this is adapted for you. If you want to see a sample of a menu the ones prior to 2012 are free, you can look at the documents that accompany those menus.

    I just finished (most) of this menu – couple comments for newbies – there are still errors. If it looks wrong, it might be, double check the original recipe. Major problems with the buffalo chicken recipe – might have said some bad words here. If you use the 6 inch corn tortillas like I did, they will crack when you fold OR roll them. My suggestion would be to freeze the filling and tortillas in two seperate bags, taped together. Then, fill the tortillas at the time you are eating them (or maybe there’s a better gluten free tortilla option I don’t know about). Hidden Valley ranch dressing is gluten free so no need to make the dressing. Mexican beef-n-beans did not make nearly enough. I love to cook, cook all the time, getting ready to start selling g-free cookies early next year. My kitchen is heavily stocked and I was constantly doing dishes. I paid my 9 yr old to help with all of this and very glad – you’ll really need an extra pair of hands to do this in one day. Major Positive though – kids LOVED the food so far. I had trouble keeping them out of the finished food. Both of them have aspergers so one is a food critic and the other one is picky LOL. The menu is pretty heavy on the tomatoes – which I happen to LOVE. Hope this helps everyone else!

    Thanks for the tips Julie. I always like to cook a month behind to get all the kinks worked out and see what everyone else says when they actually made them. i remember one month I had like 10 onions left over. It was hilarious. I double check now. I know it’s hard to catch everything with the amount of work that goes into it! Sounds like a yummy month and can’t wait to get started!

    Hi! Just getting ready to do the Nov GFDF menu and I will be cooking for 4 people. I noticed, though, that the Sticky Chicken recipe only says I need 1 pound of chicken for 4 people to make 2 dinners or 8 servings. That doesn’t seem right and I noticed that 1 serving says you need 1 pound of chicken. Can you tell me what the recipe should be for 4 people?

      Hi Lindsey. I’m so sorry about this mix up! The chicken calculation is incorrect. Change it to 4 pounds and the rest of the numbers are correct. I hope you enjoy!

    I loved the idea of this Menu. I am a very big NEWBIE here but love to cook and am a good cook too. There a lot of recipes very heavy on the meat of Gluten free here. Also the chicken thing really messed me up too. I thought i read the recipes throughly before i went shopping but really didn’t read the directions and had to refer to the inspiration sites to get more info. The sticky chicken isn’t to be made with chicken breast at all. The website clearly states that it has to be with skin on chicken. The breast doesn’t turn out at all. Glad i read that before i went a head and made it. Also the Meatballs were only twelve small meatballs. I put in 6 servings to feel my family of 4 making sure i had enough for extra helpings. Six meatballs for a family of 4 is not enough when the meatballs are so small. I have ran into this a lot through out the whole list of recipes. I was going to make the muffins and i put in 6 servings and its enough to make 6 muffins but call for three gallon sized bags haha. I same with the cake and most breakfast items. Am I confused or should i have tripled the servings to get more to freeze. Basically that would be only three breakfast muffins per person for the whole month? I just spent 500 on food and at a loss with most of these recipes. Oh well. I should have done better planning :(

      Kimberlee, sorry you had troubles. These documents went through two test cooks and they didn’t report any errors. I’ll go through again and see. I will also check with Mindy about the sticky chicken, she is out for a bit, but I’m sure she had a reason.

      I only have our set of recipes set to 4 for testing so I can’t speak for 6. I do know that the storage containers can be hard for a program to adjust :)

      For the sticky chicken, we actually ate the last of it last week – found it in the back of freezer ;) We only used chicken breasts and it turned out really great. My sauce-phobic son even liked it, though he preferred it over rice to help with what he calls spice (the rest of us call it flavor ;) ).

      We made miniature muffins rather than full-size, only because my muffin tins needed liners and I was out that day – oops! It does make a smaller than expected batch; it’s a recipe we’ve used again since then and we doubled it. The batch size and servings (if we’d done them full-size) seem to match what was in the original recipe though, but maybe I read it wrong ;)

      I can’t remember now how many meatballs we got – we ate them up pretty quickly because we had dinner guests and served it all then.

      As a test cook, I’ll be double-sure to check details on my next go-around (this week!). :)

    Might want to check the Baked Meatballs. I scaled it for 4 people and it called for 4 3/4 cups of chopped onion. When I made these, I chopped that much, and then stopped myself before adding it all. On the bright side, now I have a big bag of chopped onions in the freezer for cooking. :)
