Gluten Free Dairy Free Omelet In A Cup
Trying to get everyone up and ready in the morning is hectic. It is especially difficult when everyone wants something different for breakfast! This is an omelet that cooks in a coffee mug in the microwave. A single serving size means everyone can customize to their own taste. It takes no time at all and the eggs come out light and fluffy.
Gluten Free Dairy Free Omelet In A Cup

Ingredients:
- 4 eggs or egg substitute
- 1.5 cups chopped, cooked broccoli
- 0.33 cup chopped tomatoes
- 0.33 cup dairy free shredded cheddar cheese
- 0.33 cup chopped mushrooms
Directions:
Beat eggs in a bowl. Add broccoli, tomatoes, dairy free cheese, and mushrooms. Fill a greased coffee mug(s) with mixture. Microwave on high for 1 minute. Stir. Microwave for another 30-45 seconds.
Freezing Directions:
Before cooking, place egg mixture in freezer bags. Remove as much air as possible, label and seal. To serve: Thaw. Place mixture in greased coffee mug and microwave on high for 1 minute. Stir. Microwave for another 30-45 seconds.
