Gluten Free Dairy Free Orange Spice Muffins
What to do when you have multiple allergies and yet still want a little muffiny goodness? Make these Gluten Free Dairy Free Orange Spice Muffins! These muffins are free of 7 of the top 8 allergens, gluten free and vegan. All that and they still have a tender, soft texture that is mildly sweet and spicy. Just perfect to serve with tea or tuck into a lunch box as a snack. Enjoy!
Gluten Free Dairy Free Orange Spice Muffins

Ingredients:
- 9 tablespoons plus 1 teaspoon finely ground brown rice flour
- 7 tablespoons almond flour
- 7 tablespoons tapioca flour
- 4 tablespoons plus 2 teaspoons corn starch
- 1 3/4 teaspoon xanthan gum
- 1 teaspoon gluten free baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/2 cup oil
- 1/4 cup sugar
- 3/4 cup almond milk or unsweetened gluten and dairy free milk substitute of choice
- 1/2 cup orange juice
- 1/4 cup unsweetened applesauce
- 1 tablespoon finely minced orange zest
- 1/4 teaspoon gluten free vanilla
Directions:
Preheat oven to 350 degrees F. Line muffin tins with paper liners or grease well. Set aside. In bowl, mix together brown rice flour, almond flour, tapioca flour, corn starch, xanthan gum, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves until well blended. In mixing bowl, blend oil and sugar until well mixed. Add almond milk, orange juice and applesauce, orange zest and vanilla. Mix on low speed until just mixed. Add dry ingredients 1/4 of the mixture at a time to the wet ingredients, blending well between each addition.
Fill muffin cups 2/3 full. Bake for about 25 to 30 minutes until toothpick inserted into the center comes out clean. Remove muffins from tin onto cooling rack and allow to completely cool.
Freezing Directions:
Put cooled muffins into gallon sized freezer bag. Remove as much air as possible, seal, label and freeze. To serve: Thaw. Eat at room temperature or warm through.

Is that supposed to be a 1/4 t of vanilla extract?
Yep, extract or flavoring. Just make sure what you use is gluten free. :)
