Gluten Free Dairy Free Slow Cooker Chicken Taco Filling

We love tacos. Even my really picky eater will eat more on taco night than any other time. I think part of it is that she gets to eat with her hands. Who doesn’t love that? Part of it also has to be the aspect of choosing your own toppings and building the taco you like all by yourself. My big kids like a taco loaded with everything from avocados to salsa, corn relish to diced tomatoes, black beans to olives. I like to serve our tacos with Cilantro Cashew Salad, and sliced avocados. Taco night is here to stay at my house, and this recipe for Gluten Free Dairy Free Slow Cooker Chicken Taco Filling makes dinner so easy to fix. It was wonderful to be able to pick up a few fresh toppings to add to our tacos (we picked fresh cilantro and tomatoes), and have dinner ready in the amount of time it took to heat the filling up. Perfect!
Gluten Free Dairy Free Slow Cooker Chicken Taco Filling

Ingredients:
- 1 Ancho chili, seeded
- 1 cup boiling water
- 4 cloves garlic
- 1/2 teaspoon chipotle chili powder
- 1 tablespoon ground cumin
- 1 teaspoons sea salt
- 3 pounds chicken breast and/or thigh meat
- 1 medium onion, diced
- 3 cups tomato puree
Directions:
Place the ancho chili in a small bowl and pour the boiling water over it. Let soak for 5 to 10 minutes. Then place the chili and soaking water into a blender with the garlic, chipotle chili powder, cumin, and salt. Blend on high until pureed.
Place the pureed chili mixture into a slow cooker with the chicken, onion and tomato puree. Cover and cook on low for 8 hours. After chicken is done, use two forks to shred the chicken. Taste and add seasonings, if needed.
Freezing Directions:
Allow chicken to cool. Place enough chicken meat into freezer bags for each meal. Remove as much air as possible, seal and freeze.
To serve: Thaw. Heat chicken mixture. Serve in gluten free taco shells and with favorite toppings.

Oh my goodness. It’s one in the morning, and I should be going to bed, but instead I’m looking at your delicious food and my stomach is grumbling – because, well, there’s NOTHING better than tacos – they’re totally one of my favorite, favorite foods! I (surprisingly!) have all the ingredients for this, and will totally be making it in the morning!
I am pulling out the slow cooker so I can do this tomorrow! The instructions say something about an onion, but the ingredients don’t mention it… No matter! I’m going to leave it out because I forgot to get any at the store today.
