Gluten Free Dairy Free Slow Cooker Sweet Potato Chili

This time of year I really like to use my slow cooker.  A slow cooker is the perfect tool to braise, make stock, soups and (of course!) chili.  To me, nothing beats a good bowl of chili when the wind is blowing and the temperature is dipping.

But what type of chili to make?  Chili is one of those things that seem quite personal.  Some like their chili with ground meat and beans, some like just beans.  Some people use cubed meat – never ground – and NEVER with beans.  Me?  I like them all, but this vegan chili really hit the spot.  The sweet potatoes, beans and spice combination make the Gluten Free Dairy Free Slow Cooker Sweet Potato Chili really satisfying and filling.  Try this as a warming lunch or serve it with a salad and gluten free corn bread for dinner.

Gluten Free Dairy Free Sweet Potato Chili

Ingredients:

  • 2 sweet potatoes, peeled and cut into 2 inch pieces
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 15 ounce can red kidney beans, drained and rinsed
  • 1 red bell pepper, seeded and chopped
  • 14.5 ounce can diced tomatoes
  • 1 tablespoon gluten free chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon gluten free chipotle chili powder
  • 1/2 teaspoon salt
  • 1 cup gluten free vegetable broth or water
  • 1/2 cup orange juice

Directions:

Add the ingredients to the slow cooker in the order listed.  Put on lid and cook on low 6-8 hours or on high 3-4 hours until sweet potato is tender.

Freezing Directions:

Allow to cool.  Divide chili among the indicated number of lunch sized containers.

To serve: Thaw.  Heat through.

Servings: 6

  2. That looks so yummy, and my son would love it (he’s allergic to beef, so can’t have “normal” chili). Do you think the OJ is essential? It’s not something I normally have on hand, and I hate to buy things for just one recipe.

      I think the oj can be skipped, if needed, but I do like how it enhances the sweetness of the sweet potatoes. Replace with broth or water. If you keep it on hand, you could keep concentrated frozen in the freezer, scoop out what you need (remembering it is concentrated and add water) then keep the rest in the freezer for when you need it again. It works like a charm! Hope that helps!
