Gluten Free Dairy Free Taco Corn Fritters
My kids pack their own lunches for school (no school lunches for us!), and during the summer we like to pack up a lunch when heading out to the park or beach. Because of this I am always on the lookout for fun, delicious things to bring with us. Something beyond the regular sandwich. When I saw this recipe for Gluten Free Taco Corn Fritters at Heavenly Homemakers, it fit the bill with just a bit of dairy free tweaking.
Gluten Free Dairy Free Taco Corn Fritters are portable, can be served warm or at room temperature and my kids love them. I like that I can alter the recipe depending on what I have on hand. You could use seasoned black beans instead of the beef, add some shredded summer squash, or toss in some minced chilis if your family likes a little heat. I made the Gluten Free Dairy Free Taco Corn Fritters pictured without the optional cheese substitute added, and they were delicious just as they were. I like to serve them with salsa and guacamole, fruit and a salad.

Gluten Free Dairy Free Taco Corn Fritters

Ingredients:
- 1/2 pound ground beef
- 1 teaspoon dried minced onion
- 1/2 teaspoon salt
- 1/2 teaspoon chili powder
- 1/4 teaspoon dried garlic granules
- 1/4 teaspoon crushed red pepper flakes, optional
- 1/8 teaspoon dried oregano
- 2 cups cornmeal, be sure gluten free
- 1 teaspoon gluten free baking powder
- 1/4 teaspoon salt
- 2 large eggs (or egg substitute)
- 3/4 cup unsweetened gluten and dairy free milk substitute of choice
- 1/4 cup honey
- 1/4 cup olive oil or milted coconut oil
- 3/4 cup gluten and dairy free shredded cheese substitute, optional
- 2 cups frozen corn, thawed
- oil for frying
Directions:
Brown hamburger meat and drain oil. Add onion, first amount of salt, chili powder, garlic, red pepper and oregano. Stir. In another bowl, mix together remaining ingredients, except corn and cheese substitute, until blended. Fold seasoned meat, corn and cheese substitute (if using) into the corn batter. Heat oil for frying in a skillet. Scoop 2 tablespoons of corn mixture into the hot oil, flattening batter to form a “patty”. Fry for 5-7 minutes on each side until cooked through.
Freezing Directions:
Allow to cool. Package in freezer bags, removing as much air as possible and seal.
To serve: Thaw. Eat chilled, at room temperature or heat through.

I’m starting to make these right now, and notice in the directions it mentions cumin. . . but no cumin measurement in the ingredients list. Uh oh.
I have the post updated now. Thanks for catching that. No cumin in the recipe, but if you like it in your taco seasoning, go ahead and add a bit to taste. I do, but I know not everyone loves it as much as me! :)

Hi quick question! When you say six servings… does that mean it makes 6 “patties” ?
I actually made two to three fritters a piece so I could work with smaller amounts of the batter. Smaller patties seemed to stay together better when flipping; much more manageable. Of course, if you are feeding a toddler, you will get more servings that way. :) Hope that helps!

Could you bake these?
I have not tried these baked. However, if I were to try it I would use a well oiled pan or silpat, shape the fritters, then spray or brush a bit of oil on the fritters before I baked them. I would try it with just one or two to start with, just to see how they bake up and how long they take to bake before making a big pan of them in case it doesn’t work out. Let us know how it works for you!
