Gluten Free Dairy Free Zesty Pizza Rolls

 

 

I like to send something fun, something a little different than the ordinary sandwich, with my kids in their lunches.  I also want to send something they will actually eat and won’t come back squished in the bottom of the lunch box.  LOL!  These Gluten Free Dairy Free Zesty Pizza Rolls are just that – fun, tasty, and (if you cut them into sticks) dunkable.  Now, what kid wouldn’t like that?  I put in a bit of gluten free mini pepperoni for my kids in the rolls above, because that is what they like.  If your child likes certain pizza toppings, add them in and make it your own.  Enjoy!

Gluten Free Dairy Free Zesty Pizza Rolls

Ingredients:

  • 1 cup brown rice flour
  • 1 cup tapioca starch
  • 1/2 cup sweet rice flour
  • 3 3/4 cup cornstarch
  • 2 tablespoons baking yeast
  • 3 teaspoons salt
  • 2 tablespoons xanthan gum
  • 2 1/2 cups gluten and dairy free unsweetened milk substitute
  • 4 tablespoons honey
  • 4 large eggs
  • 2 large egg whites
  • 1 cup oil
  • 1 1/2 cup gluten free pizza sauce
  • 1 1/2 cup gluten and dairy free cheese substitute, mozzarella style
  • 1/2 cup thinly sliced fresh basil

Directions:

Whisk together the dried ingredients in a large bowl or a lidded (not air tight) food container. Combine the liquid ingredients and mix them into the dry ingredients until until well blended. Cover and allow the dough to rest at room temperature for 2 hours.

Scoop half the dough into a well oiled 9″ x 13″ pan.  Top with pizza sauce, cheese substitute and basil.  Scoop the second layer of dough over the pizza ingredients.  Using a knife, gently swirl the dough and toppings, as you would a marble cake.  Using oiled hands or a spatula, smooth the top of the dough.

Cover loosely with plastic wrap and let raise for 60 minutes. Preheat oven to 350 degrees F. Bake for 45 minutes until pizza rolls are done and have browned.

Freezing Directions:

Allow to cool completely. Place pizza rolls into indicated number of gallon sized freezer bags.

To serve:  Thaw. Eat at room temperature or warm through.

    Yum! I love anything pizza :)
    Do you think water would work instead of a milk substitute? My regular pizza crust recipe uses water… I don’t usually have rice or almond milk around. TIA!

      Yes, water should work, but I would use slightly less water than milk substitute. Let us know how it works for you!
