GLUTEN FREE/DAIRY FREE September 2011 OAMM Menu (OAMC, Freezer Cooking, Bulk Cooking, Power Cooking)
I hate to admit it, but summer is wrapping up; school supplies are bought, new teachers have been met, bigger shoes have been bought… Yep, it’s that time of year. Time to get back into a more regular routine for my family as school starts up. If you are in the same boat, this month’s menu will help you pull together meals for healthy before school breakfasts, lunches to pack, and easy to get onto the table dinners to make the transition to fall activities a bit smoother. All recipes use the tasty seasonal ingredients you can find in your local farmer’s markets and stores.
I hope you enjoy these meals as much as our early readers/cooks have. If you are new and not sure how to get started, read here. And there are several other helpful links under the Helpful Hints/Resources section below to help you on your cooking journey. Good luck!

Test Cooks
Each month we have some wonderful volunteers who “test” out the menu prior to publication. They do an amazing job of helping to eliminate confusion and mistakes. They may not catch everything but they sure do catch A LOT! Here is a little bit about this month’s test cook:

The two cornbread recipes have eggs listed in the ingredients, but are not mentioned in the instructions. Also, please advise on egg alternatives for these recipes. Thanks :)
The eggs need to be added at the same time as the baking soda, baking powder and salt. Sorry about that. We’ll get the recipe cards corrected as soon as possible.
To replace eggs in gluten free baking, I use the guide lines in this post: http://onceamonthmom.com/going-egg-free-how-to-substitute-eggs-in-recipes/
Also, the Jiffy Cornbread mix lists ‘Wheat Flour’ as its first ingredient. Just FYI for those wanting to make the corn dog muffins. =)
This recipe has been adapted to be Gluten Free Dairy Free (see the link or recipe cards) and DOES not use Jiffy Cornbread Mix.

I am a single mom with MS. I can get around with many limits in my home. I can’t stand for more than a few minutes at a time (not good for food prep, etc.). My son has Aspergers and is incredibly picky. He is GFDF and it works great for him. I am trying to encourage him to eat better, and when I stumbled on your website, I was intrigued! My dad goes to the grocery store for me, and the fact that you provide a grocery list is AWESOME!! I will do a monthly membership and pick and choose from your menus what I think he will actually eat. He will not touch any fruit. He has a powerful gag reflex! Vegetables are “iffy” but I may be able to substitute some things. My mom can come by once a month to help me with prep and freezing. I’m so excited about getting started and trying this out! Thanks for thinking of everything! If the monthly membership works out as good as I hope it does, I will be a member for life! Thanks!
Kelly, so glad you found us and we do hope it works out for you! Thank you for sharing your story.
