Grandma’s Rhubarb Dessert: Saving Second Base

My Aunt Lora was diagnosed with breast cancer in December of 2003, and then with a re-occurrence in July of 2007.

She kept busy and active in between chemo and other treatments. She was funny and crazy (the good kind). She loved people with her whole heart. She was always willing to give second chances and she would tear you apart like a lioness if you hurt someone she loved. She loved cooking and baking with her kids, grand kids, nieces and nephews.

We all used to meet up at Grandma’s house when we were all younger and have our huge family meals (holidays, reunions, etc) and one of our favorite things was Grandma’s Rhubarb Dessert, a family reunion favorite. Now every time we have it I think of my family during happier times and how much I miss my Auntie.

Grandma’s Rhubarb Dessert (crisp)

Ingredients:

  • 4 c. Rhubarb (diced)
  • 1 1/3 c. powdered sugar
  • 1 c. flour
  • 1 c. sugar
  • 1/2 c. melted butter
  • 2 eggs, beaten
  • 1 tsp. baking powder
  • 1 tsp. vanilla

Directions:

Mix rhubarb and powdered sugar and put in greased 9 x 13 pan. Mix and pour remaining ingredients over rhubarb in pan. Bake at 350 degrees so top is lightly browned, approximately 30 mins.

Serve with whip cream or vanilla ice cream.

    What am I mixing and pouring over the rhubarb? Is it all the other listed ingredients?

    @ Leah: Yes, first mix the rhubarb & powdered sugar a put into pan then mix remaining ingredients in a separate bowl and pour over the rhubarb in the pan……

    I made this this afternoon (with frozen rhubarb) and it took almost an hour at 350.
