Grilled Cilantro Lime Chicken

 

Cilantro is one of my favorite fresh herbs of summer. It comes in our CSA share, but I had to plant some in our garden this year as well because I simply cannot get enough! Although my cilantro took off, I can’t seem to keep up with the four plants I planted along with our CSA two bunches. Can we say a little overzealous with the cilantro?

I came across this recipe in a magazine ad a few years ago and decided to adapt it to our family taste. It goes just perfectly with our family Salsa Verde! It’s great on the grill or the stovetop, whatever you choose you will not be disappointed.

Grilled Cilantro Lime Chicken

Ingredients:

Directions:

Mix olive oil, garlic, lime juice, cilantro, salt and pepper in a bowl. Divide and pour into freezer bag with Chicken marinade for at least one hour or freeze until ready to use. Heat grill or grill pan to medium high heat, Grill for about 6 minutes a side. Serve with salsa verde.

Freezing Directions:

    You can freeze the cilantro- I pick it from the stem and freeze only the leaves. Then when you want some in the dead of winter you can pull it out and crumble it instead of having to chop it.

    I made a large batch of this on my mini-cooking day without the salsa verde since I didn’t have it on hand. My entire family (kiddos included) absolutely loved it! So moist and tasty! Next batch will be with the salsa, which can only make it even more yummy.
