Ham and Cheese Egg Rolls

 

I’d like to let you in on a little secret I’ve discovered in diet-friendly cooking — egg roll wrappers! They’re low in calories, fat, and carbs, and even have a little protein in them. I don’t know about you, but when I bite into a crispy egg roll-type food, I feel like I’m eating something indulgent, even when it’s a perfectly healthy choice! The key is to spray them well with non-stick cooking spray before baking, and baking them long enough to get nice and crispy.

The recipe I’m featuring today is made with ham and swiss, and is excellent dipped in honey mustard…but the possibilities for these are endless! You could try jalapenos, low-fat cream cheese, and a touch of all-fruit raspberry jam…or chicken breast, buffalo wing sauce, and a bit of bleu cheese or light ranch dressing. Get creative and enjoy! Ham and Cheese Egg Rolls

Ingredients:

  • 8 egg roll wrappers
  • 8 slices lean deli ham
  • 4 slices swiss cheese
  • Cooking spray

Directions:

Preheat oven to 400°F and spray a baking sheet with non-stick cooking spray. Place one slice of ham and one-half slice of cheese on each egg roll wrapper. Turn the wrapper towards you in a diamond shape, then fold the bottom side of the wrapper over the meat and cheese, then fold in the sides. Roll the top of the wrapper around into an “egg roll” shape, then use a bit of water to seal the edge. Place on prepared baking sheet. Repeat for remaining egg roll wrappers, then spray the tops of the rolls with cooking spray. Bake for 16 minutes, flipping after the tops turn golden brown.

Freezing Directions:

Cool completely, then place egg rolls in a freezer bag. Label and freeze. To serve, microwave two egg rolls for 2 minutes or until heated through.

    I tried these and absolutely loved them!!!! Next we tried a different version with turkey bacon, chopped fresh jalapenos, and fat-free cream cheese…amazing! Like a stuffed jalapeno popper but in a wrap! Next up we’ll try some southwest grilled chicken and pepper jack cheese.
