Healthier Double Chocolate Muffins Recipe

When one is searching for a low calorie choice for breakfast, you usually don’t think of double chocolate, right? But it doesn’t have to be that way. Here is a muffin that you can feel good about eating to start your morning off. Add a bit of fruit and you are ready to go!

Healthier Double Chocolate Muffins

Ingredients:

  • 1 cup oat bran cereal
  • 1.33 cups low fat buttermilk
  • 0.25 cup applesauce
  • 1 large egg
  • 0.75 cup brown sugar, packed
  • 0.5 cup whole wheat flour
  • 0.5 cup all-purpose flour
  • 0.5 cups unsweetened baking cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • 0.25 teaspoon salt
  • 0.33 cups miniature chocolate chips

Directions:

Preheat oven to 375°F. Line a 12 regular-size muffin tin with paper cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in a food processor). In medium bowl, mix cereal and buttermilk; let stand 5 minutes. Stir in applesauce and egg. Add remaining ingredients except chocolate chips and mix until just blended. Stir in chocolate chips. Divide batter evenly among muffin cups. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. 

Freezing Directions:

Cool completely, wrap in plastic wrap and freeze in gallon sized bag. To serve: Heat in microwave until heated through.
