Healthier Pork Chops with Pineapple Salsa
It is grilling season at my house and we love anything that doesn’t heat up the kitchen. Pork is one of our favorite meats because of it’s versatility. Pineapples are on sale and why not combine the two into one tasty dish. Here is a super fast, fresh or freezable option for you from our summer menu. It was so good that there are no leftovers for lunch. We did our pork on a grill, you can use either a grill or your stovetop.
Healthier Pork Chops with Pineapple Salsa

Ingredients:
- 1 cup(s) pineapple chunks
- 1/2 small red onion, halved and thinly sliced
- 1/2 (to 1) jalapeño chile, ribs and seeds removed, for less heat, thinly sliced
- 1 tablespoon(s) honey
- 1/4 cup(s) fresh cilantro, chopped
- Coarse salt
- Ground pepper
- 1 tablespoon(s) vegetable oil, such as safflower
- 1 (8- to 10-ounce) bone-in pork loin chop
- 1 teaspoon(s) all-purpose flour
Directions:
1. In a medium bowl, combine pineapple, onion, jalapeño, honey, and cilantro. Season with salt and pepper; set salsa aside.
2. In a skillet, heat oil over medium. Season pork with salt and pepper; dust with flour. Cook until browned on both sides and opaque throughout, 3 to 4 minutes per side.
Freezing Directions:
3. To Freeze: Place each serving of cooked pork, topped with pineapple salsa, into a quart sized freezer bag.
4. To Serve: Defrost. Microwave 60-90 seconds.
