Hellmann’s BBQ Chicken Bites

If mealtime was always up to my kids (6, 4, and 2), we’d have chicken nuggets or hot dogs every day and broccoli would be a curse word. No, despite my pleadings, they aren’t very adventurous in trying new things. But because I don’t give in to the role of short-order cook, a rule at our house is that you may not like it but you have to try it.
When I came across the opportunity to try a recipe from Hellmann’s® Chicken Change-up I thought the homemade Chicken Nuggets with BBQ Sauce would be popular with my family and I loved the idea of using a mayo sauce to bread and add flavor to the chicken.

BBQ Chicken Bites

Ingredients:
- 0.5 cup Hellmann’s® or Best Foods® Real Mayonnaise
- 0.25 cup barbecue sauce
- 0.5 Tablespoon Dijon mustard
- 4 boneless, skinless chicken breasts (about 1.5 pounds)
- 1 cup bread crumbs
Directions:
Cut chicken into nuggets (I found kitchen scissors worked well.) Combine Hellmann’s® or Best Foods® Real Mayonnaise, barbecue
sauce and mustard in small bowl. Coat chicken with sauce, then bread crumbs. Arrange chicken on baking sheet. Bake at 375F for 15 minutes or until cooked through.
Freezing Directions:
Prepare and cook as above. Cool and place in a freezer bag. To serve: reheat in microwave 1-2 minutes or in oven 10-15 minutes or until heated through.
**Note: The original recipe recommends different sauce measurements and suggests reserving some sauce for dipping. If you’re going to be serving these nuggets right away, you may want to do this. Otherwise, use all the sauce for coating the chicken as mayo dipping sauce won’t freeze very well.

Everybody likes pizza here, so I try to keep pizza dough and cheese in the freezer. Then I mix and match toppings depending on what I have and who’s eating.

Ours is chicken nuggets and I can’t wait to try this version to change things up! We use the nuggets in a tortilla with a little ranch dressing and shredded cheese. The kids love it!
Quesadillas with tomatoes are the what my icky eaters will ALWAYS eat.

I made these yesterday and we had left overs today at lunch. 4 yr old loved them, 2 yr old with CP and eating issues pushed it around the plate, but that’s nothing new. Only question is that I find that the bread crumbs don’t adhere well, so when I try to cut the chicken, all the bread crumbs slide right off. Any thoughts on that? Otherwise, it was a hit. Thanks!

I am just starting to learn how to cook and gave this recipe a try. It was yummy! The only thing is I don’t eat Mayonnaise so I substituted plain, non-fat greek yogurt.
