Homemade Iced Oatmeal Cookies

When you think of Iced Oatmeal cookies, if you are like me, you think of the kind you buy at the grocery store in the plastic tray.  Now, I am not knocking these cookies, I actually have loved their crispy, crunchy texture with a small dab of icing on top.  That is until I came across this recipe for the homemade version.  After experimenting a few times with the ingredients, this is the final result.  And from first (or fifth) bite of dough, to the tenth cookie, I still can’t get enough!  Even my kids scarf them up  - which to them a cookie isn’t a cookie without chocolate chips! These little delicious bites of heaven are completely freezer friendly – but I have yet to have any of the batch left to put in the freezer!

Homemade Iced Oatmeal Cookies

Ingredients:

  • 1 cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 1.5 Tbsp honey
  • 2 tsp vanilla
  • 1.5 cups all purpose white flour
  • .5 cups whole wheat flour
  • 1.5 tsp baking soda
  • 2 tsp cinnamon
  • .5 tsp salt
  • 2 cups quick oats

Icing:

  • 1.5 cups powdered sugar
  • 4 Tbsp milk

Directions:

Preheat oven to 350F.  Cream butter and sugar together.  Add eggs, honey and vanilla.  In a separate bowl, combine flour, baking soda, cinnamon and salt.  Gradually add to creamed mixture.  Stir in oats.  Drop by rounded teaspoonfuls onto a greased cookie sheet.  Bake 6-7 minutes.  Meanwhile, mix icing of powdered sugar and milk with whisk until smooth.  Cool cookies for about a minute on a wire rack, then ice.

Freezing Directions:

Cool completely.  Transfer to gallon freezer storage bag.  TO SERVE:  Remove desired number of cookies and let thaw on counter, or warm in microwave for 10 seconds.

Servings: 4-5 dozen cookies

    Making these today.  Wondering if maybe I measured wrong and added too much liquid.  The dough was really gooey and when I baked the cookies they poofed up with air in the center and didn’t cook in the middle and cooked on the outside.  I cooked it for about 12 minutes.

    I’m making them right now and it’s def taking longer than 6-7 minutes. They’ve been in 12 so far and still gooey. Smell delicious though!

    I had to cook these for 10 mins to get them done. They turned out to be very flat. However, my family loved the flavor and has already asked me to bake them again.

    I made these again and they were still runny. So I added an extra half cup of wheat flour and they still spread but a lot less, and they puffed a little more. Still had to bake 10-12 minutes. These are super delicious! (But it’s hard to go wrong when it’s a cookie iced with sugar!)
