Huevos Rancheros Breakfast Burritos
Here in Texas, we love our Mexican food. And by love, I mean, we could eat it for almost every meal. Breakfast is no exception. Filled with red bell peppers for another layer of flavor, these burritos are easy to grab on a busy morning. If you have the time to sit and eat at the table, you could top with hot sauce and sour cream to get the full burrito experience.
Huevos Rancheros Breakfast Burritos

Ingredients:
- 8 medium eggs
- 2 Tablespoon butter
- 8 flour tortillas
- 16 0unces refried beans
- 4 ounces green chiles
- 1.25 cup chopped onion
- 1.5 cup chopped red bell pepper
- 1 cup shredded cheddar cheese
- 0.5 teaspoon cumin
- 0.5 teaspoon garlic powder
- 0.5 teaspoon black pepper
- 0.25 teaspoon salt
Directions:
Heat skillet on medium low and add butter. Scramble eggs along with onion and red bell pepper. While eggs are cooking, add in cumin, garlic powder, pepper, and salt. Once the eggs are cooked to desired consistency, remove from pan. Warm refried beans and green chiles in a small saucepan on the stove. Microwave tortillas for 30 seconds, then fill with beans, egg mixture, and top with cheese. Roll tortilla into a burrito. Repeat until all burritos are assembled. Serve with hot sauce and sour cream if desired.
Freezing Directions:
Follow directions above to assemble all burritos. Allow burritos to cool, then individually wrap with plastic wrap. Place in freezer bag, label, and freeze. To serve: reheat in microwave for 1-2 minutes.
Servings: 4 (2 burritos each)

these sure look good, but not what I was expecting with the name huevos rancheros. I was expecting fried eggs on a fried corn tortilla with beans all covered in ranchero sauce. guess everyone has a different version. I’m gonna have to make some of these for the freezer, something you can’t do with my version….lol. They look much better than your normal breakfast burrito and I really like having stuff in the freezer to grab on those busy mornings when all I have time for is to grab and go.
Genius! I love breakfast burritos, but there is no way I would make them in the morning before work. I never even thought about pre making them to freeze– can’t wait to try it out!

These sound great. My only problem is that we don’t have a microwave. Could these be re-heated in a skillet or the oven? My toaster oven broke or I would throw that in there too :) Any other ideas would be welcome as well. Thanks
Theresa, absolutely the oven or toaster oven would work. If you did a skillet, it would crisp up the outside more than warm the inside probably but it could work. Let me know what you try and how it works out!
Do you have to defrost before you reheat in the microwave or do you do this from frozen?
Elle, I have been reheating mine in the microwave from frozen for about 1.5 minutes. It will obviously vary from microwave to microwave.
