I Introduce to You, Rack of Pork. . .

Have you ever heard of rack of pork? Prior to several weeks ago when I got an email from the wonderful folks at The Motherhood on behalf of the Pork Board and Costco, I sure hadn’t. I had heard of a rack of lamb, I had even had one before, but never a rack of pork. So the fact that I have been commissioned to come up with a party worthy rack of pork recipe is a tad bit intimidating to me. But I think that I am up for the challenge.

Rack of Pork

It turns out that rack of pork is the pork rib roast or center cut of pork. It is the equivalent of a rack of lamb but for the pig. And it makes a beautiful piece for a holiday spread or dinner party.

On my visit to Costco (this was my first time ever mind you), I was informed that the rack of pork is not sold year round in the store but is kept in the meat case from now until mid-January. You know, the holiday season? And this week, in honor or the incoming rack of pork season, Costco has a $2.50 off rack of pork from October 24th – October 31st. I have a fantastic recipe coming your way as well so go ahead and go get a rack of pork while you can get a discount on it. You can be ready for your holiday guests WAY before they even arrive. I can’t wait to share it with you!
