These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY by yourself! The ingredient quantities can now be found on the 10 Day Mini February 2012 Recipe Cards.

What to Do
Night Before Ingredients that need CHOPPED (**indicates usually okay for food processor)

  • See Prep/Chopping Tab on the Menu Recipe Cards
Night Before Start slow cooker(s) of ground beef for Beef Vegetable Soup & Taco Pasta. (If limited on time you can brown ground beef instead the day of.)
Night Before Start slow cooker(s) of chicken breasts for Chicken and Broccoli Bake. (If limited on time you can boil chicken instead the day of.)
1 Brown pork for Chile Verde and drain fat.
2 Saute .33 cups of DICED onion in butter (X cups sauteed). Set aside

  • 3 cups diced, raw = 1.50 cup sauteed (Chile Verde)
3 Start slow cooker(s) for Chile Verde. Add browned pork and sautéed onion, and remaining ingredients.  Cook on LOW for 5-6 hours.
4 Turn off Beef & Vegetable Soup & Taco Pasta (slow cooker), remove lid and allow to cool.
5 Turn off Chicken and Broccoli Bake (slow cooker), remove lid and allow to cool.
6 Cook pasta Taco Pasta according to package directions for al dente.  Drain, reserving 1/2 cup of pasta water. Set aside.
7 Mix & Assemble:

  • Beef & Vegetable Soup
8 Turn off Chile Verde (slow cooker), remove lid and allow to cool.
9 Prepare and freeze Taco Pasta.
10 Prepare and freeze Chile Verde.
11 Mix & Freeze:

  • Chicken Broccoli Bake
  • Easy Ranch Chicken. 
12 Kitchen Cleanup!
13 Congratulations you are DONE!!!!!
