These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY by yourself! The ingredient quantities can now be found on the 5 Day Mini February 2012 Recipe Cards.

What to Do
Night Before Ingredients that need CHOPPED (**indicates usually okay for food processor)

  • See Prep/Chopping Tab on the Menu Recipe Cards
Night Before Start slow cooker(s) of Hot Italian Sausage for Crockpot Sausage & Peppers. (Or brown in skillet the same day if you don’t have an extra evening).
Night Before Start slow cooker(s) of Ground Beef for Taco Tater Tot Casserole. (Or brown in skillet the same day if you don’t have an extra evening).
1 Saute 6 cups of Chopped onion and Chopped Peppers in olive oil (3 cups sauteed). Set aside

  • 3 cups diced, raw = 1.50 cup sauteed (Crockpot Sausage & Peppers)
  • 3 cups diced, raw = 1.50 cup sauteed (Recipe)
2 Turn off Crockpot Sausage & Peppers (slow cooker), remove lid and allow to cool.
3 Prepare and freeze White Bean Enchiladas
4 Mix & Assemble:

  • Taco Tater Tot Casserole 
  • Enchilada Meatballs
5 Mix & Freeze:

  • Cheesy Potatoes & Ham
  • Crockpot Sausage & Peppers
6 Kitchen Cleanup!
7 Congratulations you are DONE!!!!!
