Instructions: DIET February 2012 Menu

These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY by yourself! The ingredient quantities needed to chop are those for a one person menu. If you would like to make more or less of a particular recipe, or will be cooking with more than one person, adjustments can be made on your own.

What to Do
1 Ingredients that need CHOPPED (**indicates usually okay for food processor)

  • See Prep/Chopping Tab on the Menu Recipe Cards
2 Preheat oven to 350°F. Prepare Mini Turkey Meatloaves for oven, then bake for 40 minutes.
3 While Mini Turkey Meatloaves are baking, prepare Carrot Cake Muffins for the oven. Remove Mini Turkey Meatloaves and set aside to cool. Turn oven up to 400. Bake Carrot Cake Muffins at 400°F 23-25 minutes.
4 While baking Carrot Cake Muffins, prepare Ruby Red Grapefruit Smoothies in blender, then package and freeze.
5 When Carrot Cake Muffins have finished baking, set aside to cool and turn off oven.
6 Prepare Healthy Breakfast Hash, then set aside to cool.
7 Brown chicken for Chicken Bruschetta Quesadilla, then finish preparing on panini grill or waffle iron. Set aside to cool.
8 Boil chicken for Waldorf Chicken Salad, then set aside to cool. While cooling, mix together ingredients for Spring Tuna Wraps, then package and freeze.
9 Finish preparing Waldorf Chicken Salad, package and freeze.
10 Cook pasta for Creamy Italian Beef Casserole. While pasta is boiling, brown ground beef for same recipe. Finish preparing Creamy Italian Beef Casserole, then set aside to cool.
11 Make sauce for Thai Basil Turkey Meatballs, then set aside to cool. Prepare meatballs for same recipe.
12 Prepare White Lasagna, then set aside to cool.
13 Brown beef for Crockpot Hamburger Casserole, then mix ingredients for same recipe. Set aside to cool.
14 Mix & Freeze:

  • Crockpot Chicken Taco Chili
  • Mojo Pork Roast
  • Loaded Baked Potato Soup
  • Stovetop Chicken Fajitas
15 Package and freeze:

  • Carrot Cake Muffins
  • Healthy Breakfast Hash
  • Chicken Bruschetta Quesadilla
  • Mini Turkey Meatloaves
  • Creamy Italian Beef Casserole
  • Thai Basil Turkey Meatballs
  • Crockpot Hamburger Casserole
