Instructions: DIET January 2012 Menu

These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY by yourself! The ingredient quantities needed to chop are those for a one person menu. If you would like to make more or less of a particular recipe, or will be cooking with more than one person, adjustments can be made on your own.

What to Do
1 Ingredients that need CHOPPED (**indicates usually okay for food processor)

  • See Prep/Chopping Tab on the Menu Recipe Cards
2 Place ingredients in slow cookers for the following recipes and start cooking:

  • Chicken Tortilla Soup - cook on low for 2-3 hours
  • Chicken, Sweet Potato, & Butternut Squash Recipe - cook on low 4 hours
  • Crockpot Honey Dijon Pork - cook on low 7-8 hours
3 Preheat oven to 350°F. Mix and prepare Nutrient-Packed Breakfast Bars for baking. Bake according to recipe card instructions. Set aside to cool.
4 While Nutrient-Packed Breakfast Bars are baking, prepare Pork Chops & Rice Oven Dinner for baking. Bake at 350°F for 60 minutes. Set aside to cool.
5 While Pork Chops & Rice Oven Dinner is baking, prepare Easy Turkey Meatloaf for baking. Bake at 350°F for 60 minutes. Set aside to cool.
6 While Easy Turkey Meatloaf is baking, prepare Chicken Enchiladas for baking. Bake at 400°F for 20-25 minutes. Set aside to cool.
7 While Chicken Enchiladas are baking, prepare Egg Casserole Cups for baking. Bake at 450°F 12 minutes. Set aside to cool.
8 While Egg Casserole Cups are baking, assemble, package, and freeze Honey Mustard Chicken.
9 Boil water for broccoli for and cook the chicken for Chilled Chicken Broccoli Salad. Finish preparing this recipe, then place in refrigerator to chill.
10 Brown ground turkey for Lasagna, then assemble, package and freeze.
11 Prepare ingredients for Black Bean Burgers. Form into patties, then package and freeze.
12 Assemble sandwiches for Grilled Ham & Swiss, cook on stovetop, then set aside to cool.
13 Prepare Skinny Italian Spinach Meatballs, then set aside to cool.
14 Blend ingredients for Raspberry Kiwi Smoothie. Package and freeze.
15 Once cooled, package and freeze:

  • Egg Casserole Cups
  • Nutrient-Packed Breakfast Bars
  • Grilled Ham & Swiss
  • Chicken Enchiladas
  • Pork Chops & Rice Oven Dinner
  • Easy Turkey Meatloaf
  • Skinny Italian Spinach Meatballs
16 Remove Chilled Chicken & Broccoli Salad from refrigerator. Package and freeze.
17 When done cooking, turn off slow cooker for Chicken Tortilla Soup; Chicken, Sweet Potato, & Butternut Squash Recipe; and Crockpot Honey Dijon Pork. Allow to cool, then package and freeze.
18 Kitchen Cleanup!
19 Congratulations you are DONE!!!!!
