Recipes

Please note that all recipes in this document have been altered (increased quantities) to meet the needs of TWO people participating in a once a month cooking (oamc, bulk cooking, power cooking, freezer cooking) day. It is indicated on each recipe whether it has been doubled or quadrupled for your convenience. If you are just one person or would like to make less of a particular recipe, you will need to make the adjustments on your own to the recipe and to the grocery shopping list.

Instructions

  • 5 pounds of chicken will be cooked in the slow cooker (Chicken Ranch Pizza Topping, Curried Chicken Tidbits). 4.5 pounds will be used for (Black Bean Salsa Chicken).
  • 15 pounds of beef (Hamburger Soup, Beef Empanada’s, Sloppy Joes, Easy Taco Bake, Sue Sue’s Casserole). This meat can be frozen because we are cooking it before freezing again.
  • 3 pounds Sirloin (Beef & Lentil Stew – Mexican Style). This meat can be frozen because we are cooking it before freezing again.
  • 12 pounds of pork loin (Pork Roast w/Apples & Pears, Asian Pork Roast). This meat CAN NOT be frozen as we are not cooking it again OR you could freeze it in 4 1.5 pound portions in 4 gallon freezer bags and just add liquid ingredients on your cooking day.

Thaw

  • 5 pounds chicken for slow cooker.
  • 15 pounds of ground beef for slow cooker.
  • 3 pounds sirloin.

Night Before:

  • Place 15 pounds of beef into 2 slow cookers, add 1 cup of water to each and cook for approximately 8 hours on low or until beef is cooked through.
  • Put 5 pounds of chicken into 1 slow cooker, add .5 cups of water and cook for approximately 8 hours on low or until chicken is done.
  • Optional (but HIGHLY recommended) – chop up all vegetables.

What to Do
A Ingredients that need CHOPPED (**indicates usually okay for food processor)

  • In the indicated order for most efficiency
  1. Yellow Onions, diced = 5lbs ~15 medium (~30 cups)**
  2. Carrots, diced = 9lbs (~22 cups)**
  3. Broccoli, chopped = 3 lbs (~6cups)**
  4. Garlic, minced (if not purchased that way) = 16 cloves**
  5. Potatoes, cubed = 6lbs ~16medium
  6. Celery, diced = 4 ribs (~1.33 cups)**
  7. Green Pepper, chopped = 3 medium
  8. Mushrooms, sliced = 1lb ** (if not bought that way)
  9. Green Onions, sliced = 10 each (~1 cups)
  10. Chicken, chopped/diced = 5lbs (5 cups)**
  11. Tomatoes, seeded & diced = 4
  12. Apple, peeled & sliced = 4
  13. Pear, peeled & sliced = 4
  14. Chicken, raw, chopped = 4.5 lbs
B Preheat oven to 400 degrees.
B Mix and ready for oven the Stuffed Pancake Cupcakes. Bake for 20 minutes.
A In a large skillet saute 26 cups of onions (this is the raw measurement, you will get less volume once you cook the onions. Estimate based on total cooked onions and portions needed for recipe) with 6 Tablespoons of butter:

  • 4 cups – Hamburger Soup
  • 4 cups – Beef Empanada’s
  • 8 cups – Sloppy Joes
  • 2 cups – Easy Taco Bake
  • 4 cups – Sue Sue’s Casserole
  • 4 cups – Tuna Noodle Casserole
A Start 4 Crock pots cooking:

  • Beef & Lentil Stew – Mexican Style – 4 gallon freezer bags.
  • Hamburger Soup – 4 gallon freezer bags.
B While Stuffed Pancake Cupcakes are cooking, mix and ready for oven the Beef Empanada’s.
B When Stuffed Pancake Cupcakes are done, place them on wire rack for cooling or transfer to a cool cookie sheet for flash freezing. Decrease oven temperature to 375 degrees.
A Start a 2 large stock pots of water boiling. When ready, cook 40oz of egg noodles. (Tuna Noodle Casserole, Sue Sue’s Casserole).
A Add additional ingredients needed to Hamburger Soup.
A Prepare and assemble Sue Sue’s Casserole – 4 gallon freezer bags.
B Bake Beef Empanadas for 20 minutes or until golden brown.
B While Beef Empanadas are baking, prepare Crystal’s Lazy Granola and ready for oven.
A Prepare and assemble Tuna Noodle Casserole – 4 gallon freezer bags
B When Beef Empanadas are done, place them on wire rack for cooling or transfer to a cool cookie sheet for flash freezing.
A Prepare and assemble:

  • Easy Taco Bake 4 Deep Dish 8×8 pans.
  • Sloppy Joes – 4 gallon freezer bags.
B Bake Crystal’s Lazy Granola for 10 minutes. Take out and stir, turn off oven and return to oven for a few hours.
B While Crystal’s Lazy Granola are baking, prepare batter for Banana Pancakes.
B Cook Banana Pancakes on griddle in batches. Place on cooling rack to cool or on cool cookie sheet in freezer to flash freeze.
A Prepare and assemble Curried Chicken Tidbits – 4 8×8 pans.
B Prepare Pizza Crust.
B Assemble Chicken Ranch Pizza Topping and put together with Pizza Crust to freeze.
A Turn off crock pots and allow contents to cool a bit.
B Once cooled package:

  • Stuffed Pancake Cupcakes – 4 gallon freezer bags
  • Beef Empanadas – 4 gallon freezer bags
  • Crystal’s Lazy Granola – 4 gallon freezer bags
A Assemble:

  • Black Bean Salsa Chicken – 4 freezer bags.
  • Pork Roast with Apples & Pears – 4 gallon freezer bags.
  • Asian Pork Roast – 4 gallon freezer bags.
B Portion:

  • Beef & Lentil Stew – Mexican Style – 4 gallon freezer bags.
  • Hamburger Soup – 4 gallon freezer bags.
BOTH Kitchen Cleanup!
BOTH Congratulations you are DONE!!!!!

    I just got home from Sam’s where I bought some of this month’s food to cook. I found 30 aluminum pans for $6. They’re the full size ones, but that’s a great deal!

    You have 2 steps where the onions need to be sauteed. Was there another step supposed to go there or am I reading it wrong? Can’t wait to start cooking. Thanks for all you do.

    I did my very first OAMC cooking day yesterday and it went really well. I did it alone and didn’t split the recipes so I have about 42 meals!!! I didn’t do the pork b/c I couldn’t find a good price this week. I am so happy with the results. I’m blogging about it today and tomorrow, Hope you get a bunch of traffic, I know that many of my friends were interested to learn more!

    I can’t wait to start this! I stumbled across this site looking for a recipe to prepare so I can take a meal to a family tonight. In turn it’s motivated me to make up a few meals this weekend as my husband is gone (army) and my oldest will be going into the hospital on Monday. I also have two younger kids~ having meals ready to throw in the oven will be such a blessing! Thanks for taking all the guess work out of this, it will surely help :)
