Instructions: November (Christmas) OAMM Menu

  • These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY!

Recipes

Please note that all recipes in this document have been altered (increased quantities) to meet the needs of TWO people participating in a OAM Cooking Day. It is indicated on each recipe whether it has been doubled or quadrupled for your convenience. If you are just one person or would like to make less of a particular recipe, you will need to make the adjustments on your own to the recipe and to the grocery shopping list.

Instructions

  • 20-24 pounds of whole turkey will be cooked in your oven or roaster (Jody’s Turkey & Noodles, Cheesy Broccoli & Rice with Turkey, Turkey Shepherd’s Pie, Jackie’s Broccoli, Turkey & Stuffing). This can be frozen and then thawed out before you cook it if you buy it early. (Make sure you allow enough time for thawing before cooking though.)
  • 10 pounds of beef – 4 lbs CAN be frozen because we are cooking it before freezing again (OAMM’s Mom’s Spaghetti Sauce). 6 lbs CAN NOT be bought ahead and frozen (Velveeta Cheesy Southwest Meatloaf).
  • 4 pounds of sausage (Sausage Balls). This meat can be frozen because we are cooking it before freezing again.
  • 24 sausage links – CAN NOT be frozen before our cooking day, unless you cut it into pieces and freeze it in 4 portions of 6 links.
  • 2.5lbs Bacon – CAN be frozen because we are cooking it before freezing again (Bacon Brunch Bites, OAMM’s Mom’s Spaghetti Sauce).
  • 6 lbs Pork Tenderloion – CAN NOT be frozen before our cooking day, unless you cut it into 1.5 lb portions and place each in a gallon freezer bag.


Thaw

  • Any meats you will be using that you have previously frozen.

Night Before:

  • Put 20-24 pounds of whole turkey into oven or roaster. Cook according to recommendations suggested for method using. (If you have time, you might want to cook this a day ahead and debone & dice the night before, it will save you LOTS of time on your cooking day).
  • Optional (but HIGHLY recommended) – chop up all vegetables, cook rice (Cheesy Broccoli & Rice with Turkey), cook bacon and chop (Bacon Brunch Bites, OAMM’s Mom’s Spaghetti Sauce).

What to Do
A Ingredients that need CHOPPED (**indicates usually okay for food processor)

  • In the indicated order for most efficiency
  1. Potatoes, Yukon Gold, peeled & quartered = 14.5 lbs
  2. Potatoes, Yukon Gold, quartered = 3 lbs
  3. Bacon, chopped = 2.5 lbs (~4.25 cups)
  4. Yellow Onions, diced = 14 med (~7 cups)**
  5. Yellow Onions, rings = 4 med
  6. Celery, diced = 9 ribs (~3 cups)
  7. Celery, finely chopped = 2 ribs (~.5 cups)
  8. Broccoli, chopped = 1.5 lbs (~3 cups)
  9. Broccoli, finely chopped = .25 lbs (~.5 cups)
  10. Cauliflower, chopped = 2 lbs (~3 cups)
  11. Cauliflower, finely chopped = .67 lbs (~.5 cups)
  12. Carrots, chopped = 3 lbs (~8 cups)
  13. Carrots, finely chopped = .4 lbs (~.5 cups)
  14. Pecans, chopped (if not purchased that way) = 16 oz (~4 cups)**
  15. Peppers, Green, chopped = 2 (~1 cup)
  16. Velveeta, cubed = 32 oz
  17. Mushrooms, sliced (if not purchased that way) = 4 lbs**
  18. Walnuts, chopped (if not purchased that way) = .25 lbs (~.5 cups)**
  19. Sausage links, sliced = 24
  20. Garlic, minced (if not purchased that way) = 8 cloves**
B Preheat oven to 350 degrees.
B Cook Bacon on cookie sheet for 30-45 minutes or until cooked through. (Bacon Brunch Bites, OAMM’s Mom’s Spaghetti Sauce) **Skip if you did this the night before – and give yourself (or your cooking partner) a pat on the back while you are at it.
A Start 2-3 slow cookers of potatoes (14.5lbs) – see Freezer Mashed Potatos directions. Cook on HIGH for 4 hours. (Freezer Mashed Potatoes, Turkey Shepherd’s Pie)
A Debone turkey and dice. (Jody’s Turkey & Noodles, Cheesy Broccoli & Rice with Turkey, Turkey Shepherd’s Pie, Jackie’s Broccoli, Turkey & Stuffing)**Skip if you did this the night before – and give yourself (or your cooking partner) a pat on the back while you are at it.
B Ready crusts for Veggie Pizza for oven.
B Place crusts in oven to bake for designated time at 350 degrees (Veggie Pizza) after bacon is done cooking.
B While Veggie Pizza crusts are cooking prepare for oven Cranberry Upside-Down Cakes.
B When Veggie Pizza crusts are done, place them on wire rack for cooling.
A Bring a large pot of water boiling and boil 24 ounces of egg noodles (Jody’s Turkey & Noodles).
A Mix and begin cooking OAMM’s Mom’s Spaghetti Sauce. Simmer for 1 hour.
B Bake Cranberry Upside-Down Cakes for 30-35 minutes.
B While Cranberry Upside-Down Cakes are baking, prepare and ready for oven Bacon Brunch Bites.
A Mix and assemble:

  • Jody’s Turkey & Noodles - 4 gallon freezer bags
  • Sweet Potato Casseroles – 4 8×8 pans
B Prepare Veggie Pizza spread and assemble Veggie Pizza and freeze – 2 cookie sheets.
A Prepare 36 ounces of Stuffing Mix in large pot (or 2) for:

  • Jackie’s Broccoli, Turkey & Stuffing24 ounces (~12 cups)
  • Turkey Shepherd’s Pie12 ounces (~6 cups) – SET ASIDE FOR LATER
A Turn off OAMM’s Mom’s Spaghetti Sauce and allow to cool for a bit.
B When Cranberry Upside-Down Cakes are done, place them on wire rack for cooling. Raise oven temperature to 375 degrees.
B Place Bacon Brunch Bites in oven and bake 12-15 minutes.
B When Bacon Brunch Bites are baking, mix and knead the dough for Make-Ahead Butterhorn Rolls. Set aside, near stove or in warm place to rise for 2-3 hours.
A Assemble Jackie’s Broccoli, Turkey & Stuffing – 4 deep dish 8×8 pans.
A Begin rice and cooking in microwave or stove top (Cheesy Broccoli & Rice with Turkey).**Skip if you did this the night before – and give yourself (or your cooking partner) a pat on the back while you are at it.
A Mix and assemble Velveeta Cheesy Southwest Meatloaf – 4 loaf pans.
B Remove Bacon Brunch Bites and move to wire rack for cooling.
B Prepare Sausage Balls for oven and bake for 15-20 minutes.
A Package OAMM’s Mom’s Spaghetti Sauce – 4 gallon freezer bags
A Mash Potatoes:

  • Freezer Mashed Potatoes – follow indicated directions (10 lbs) (~2/3 of cooked potatoes)
  • Turkey Shepherd’s Pie - mash potatoes and add butter and milk until desired consistency (4.5 lbs) (~1/3 of cooked potatoes)
A Assemble:

  • Freezer Mashed Potatoes - 4 8×8 pans
  • Turkey Shepherd’s Pie – 4 deep dish 8×8 pans.
  • Cheesy Broccoli & Rice with Turkey - 4 8×8 pans
B Prepare, assemble and freeze Frozen Peanut Butter Pie.
B Once cooled package:

  • Cranberry Upside-Down Cakes – 2 8-inch cake pans covered with plastic wrap/foil
  • Bacon Brunch Bites – 2 gallon freezer bags
  • Sausage Balls – 4 gallon freezer bags
A Prepare and make Cranberry Cream Cheese French Toast.
A Allow Cranberry Cream Cheese French Toast to cool on wire rack or flash freeze.
B Punch, roll and freeze Make-Ahead Butterhorn Rolls - 4 gallon freezer bags
A Prepare and assemble:

  • Sausage & Vegetable Medley – 2 gallon freezer bags
  • Asian Peanut Butter Pork – 2 gallon freezer bags
B Package Cranberry Cream Cheese French Toast – 4 gallon freezer bags
BOTH Kitchen Cleanup!
BOTH Congratulations you are DONE!!!!!
