Recipes
Please note that all recipes in this document have been altered (increased quantities) to meet the needs of TWO people participating in a OAM Cooking Day. It is indicated on each recipe whether it has been doubled or quadrupled for your convenience. If you are just one person or would like to make less of a particular recipe, you will need to make the adjustments on your own to the recipe and to the grocery shopping list.
Instructions
- 6 pounds of whole chicken will be cooked in the slow cooker (Cheesy Chicken Tortellini Casserole). This can be frozen and then thawed out before you cook it if you buy it early.
- 1.75 pounds of beef and 1.75 pounds of sausage (Meat Pie). This meat can be frozen because we are cooking it before freezing again.
Thaw
- Any meats you will be using that you have previously frozen.
Night Before:
- Put 6 pounds of whole chicken into a slow cooker, setting it on 3 1 inch diameter foil balls. Add 1 cup of water and cook for approximately 8 hours on low or until chicken is done. Or if using the Pampered Chef Deep Covered Baker, microwave for 30 minutes.
- If baking pumpkins for your making your own puree, do it the night before.
- Optional (but HIGHLY recommended) – chop up all vegetables, 1.75 pounds of beef and 1.75 pounds of sausage with 1 cup of water in slow cooker overnight.

| B | Preheat oven to 400 degrees. |
| B | Prepare Pumpkin Pie for oven. Bake for 15-20 minutes at 400 and then turn down oven to 350 degrees and bake for 45 minutes longer. |
| A | Start 2 slow cookers of potatoes – see Perfect Mashed Potato directions). Cook on HIGH for 4 hours. (Perfect Mashed Potatoes, Meat Pies) |
| A | Debone chicken and dice. (Cheesy Chicken Tortellini Casserole) |
| B | While Pumpkin Pie are cooking mix and ready for oven and waffle maker the Pumpkin Coffee Cake & Gingerbread Waffles. |
| B | When Pumpkin Pies are done, place them on wire rack for cooling or transfer to a cool cookie sheet for flash freezing. |
| A | Prepare sauces and set aside to cool:

| B | Bake Pumpkin Coffee Cake for 50-55 minutes. |
| A | Assemble:

| B | While Pumpkin Coffee Cake are baking, cook Gingerbread Waffles. |
| B | When Pumpkin Coffee Cake are done, set on cooling rack. |
| B | Cook Gingerbread Waffles. Set on cooling rack or place on cooled cookie sheet for flash freezing when finished. |
| A | Begin rice and broccoli cooking in microwave (Broccoli Casserole). |
| A | In large skillet, saute .5 cups onion & 1 cups celery in 4T of butter until tender. Set aside. (Broccoli Casserole). |
| A | In same skillet, saute 1.5 cups onion & 3 cups celery in 2 cups butter. Continue to follow directions to completion for Bread Stuffing - 4 gallon freezer bags. |
| A | Prepare and Assemble Broccoli Casserole – Deep Dish 8×8. |

| A | Turn off potatoes and set aside the equivalent of 5 potatoes (20 quarters) for Meat Pies. |

Ok, just realized that I think I did something wrong..is the October menu to be used in November? Because this is the first time I am doing this and I bought all the October stuff to cook in October…silly me….
You can do it either way, but our method is usually to shop throughout the month to get the most on sale and then cook at the end of the month, eating the food in November. You should still be okay.
