- These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY!

Recipes
Please note that all recipes in this document have been altered (increased quantities) to meet the needs of TWO people participating in a OAMM Cooking Day. It is indicated on each recipe whether it has been doubled or quadrupled for your convenience. If you are just one person or would like to make less of a particular recipe, you will need to make the adjustments on your own to the recipe and to the grocery shopping list.
Instructions
- Chicken, boneless – 10 pounds used – it can be frozen beforehand if handled properly (Chicken & Wild Rice Soup, Tostada Goop).
- Ground Beef – 8 pounds and it can be frozen beforehand if handled properly but not recommended based on quality (Down Home Spaghetti Sauce, Down Home Meatballs, Down Home Lasagna, Kaylee’s Casserole).
- Sausage, fully cooked links – 5.25 lbs used and it can be frozen beforehand if handled properly (Crockpot Pizza Soup, Sausage Ratatouille, Baked Pasta with Eggplant, Tomato, Sausage, Breakfast Wraps).
- Sausage, ground – 4 lbs used and it can be frozen beforehand if handled properly but not recommended based on quality (Sausage Apple Egg Casserole, Down Home Spaghetti Sauce, Down Home Meatballs).
- Note: You will need 4 slow cookers for this menu or 2 slow cookers and one 12 quart stock pot.
Thaw (in refrigerator)
- 2 lbs of chicken
- 2 lbs of ground beef
- 5.25 lbs of smoked sausage links
- 1 lbs of ground sausage
Night Before:
- Place 6 pounds of ground beef and 1 lb of sausage into a slow cooker, add 1 cup of water and cook for approximately 8 hours on low or until meat is cooked through.
- Place 10 lbs of boneless chicken into 2 slow cookers, add 1 cup of water to each and cook for approximately 8 hours on low or until chicken is cooked through.
- Optional (but HIGHLY recommended) – chop up all vegetables, cook rice.

| B | Prepare Apple Baked Oatmeal. Bake at 350 for 40-45 minutes. | |

| A | Start 2 slow cookers with ingredients for Down Home Spaghetti Sauce. Cook on Low for 3 hours. | |
| B | While Apple Baked Oatmeal is baking, mix and prepare Down Home Meatballs for oven. | |
| B | When Apple Baked Oatmeal are done baking, bake Down Home Meatballs for 15 minutes. | |
| A | Start 2 large stock pots of water boiling for pasta. | |
| A | Saute SLICED Sausage – 4.50 lbs
Saute DICED Sausage – 12 oz

| A | Boil Pasta – 4 lbs

| B | While Down Home Meatballs are baking, prepare Pizza Croissants for oven. | |
| A | Mix & Assemble:

| B | When the Down Home Meatballs are done baking, add them to each of the two slow cookers (do not allow to cool). | |
| B | Bake Pizza Croissants for 14-17 minutes. | |
| A | Prepare Chicken & Wild Rice Soup - 4 gallon freezer bags | |
| B | Mix & Assemble:

| B | Package (Set aside 12 cups Down Home Spaghetti Sauce for Down Home Lasagna:

Just one question. I have yet to do my first month of cooking. I just was curious your suggestion for the 16 – 8×8 pan needed for the recipes. Do you use foil pans? Or glass pans? Thanks!!! Tammy

You can recycle the foil pans too

My baby is due in 3 weeks and I found OAMM while looking for recipes to stock the freezer with meals. THANK YOU! Today is our big cooking day. I’ve been having some confusion about the sausage. The grocery list has fully cooked Italian sausage links, but the Instructions refer to smoked sausage. The instructions for the first day refer to slicing the sausage (#4 in the list of things to chop), but which sausage? I’m going through the recipes now and I’m sure I’ll figure it out. Just wanted to alert you. Thanks again!
Smoked sausage and italian sausage links refer to the same items. Those are the sausages that need sliced.
