  • These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY!

Recipes

Please note that all recipes in this document have been altered (increased quantities) to meet the needs of TWO people participating in a OAM Cooking Day. It is indicated on each recipe whether it has been doubled or quadrupled for your convenience. If you are just one person or would like to make less of a particular recipe, you will need to make the adjustments on your own to the recipe and to the grocery shopping list.

Instructions

  • 12 pounds of chicken will be cooked in the crock pot (Easy White Chicken Chili, Chicken & Chilies Casserole) , it does not need to be thawed before cooking. 4 pounds will be used for (Deconstructed Broccoli and Cheese Stuffed Chicken Breasts) and it can be placed directly in the bags frozen, add sauce and stick back in freezer.
  • 6 pounds of beef (Mexican Cornbread Casserole, Carole’s Chili). This meat can be frozen because we are cooking it before freezing again.

Thaw

  • 4 pounds chicken breasts (Chicken Marsala).

What to Do
A Ingredients that need CHOPPED (**indicates usually okay for food processor)

  • In the indicated order for most efficiency
  1. Pears, cored & sliced (rounds) = 4
  2. Yellow Onions, diced = 6lbs ~18 (~9 cups)**
  3. Yellow Onions, sliced = 2 medium
  4. Carrots, sliced = 3lb (6 cups)**
  5. Apples, peeled and shredded = 2 med (1.33c)**
  6. Garlic, minced (if not purchased that way) = 40 cloves**
  7. Green Onions, sliced = 2
  8. Potatoes, Red cubed = 4 lbs (4 cups)**
  9. Chicken, chopped/diced = 12lbs (12 cups)**
  10. Basil, chopped = 2 bunches**
  11. Cilantro, chopped = 3 bunches**
  12. Green Beans, ends removed = 1.5 lbs
  13. Mushrooms, sliced = 5lbs**
B Preheat oven to 350 degrees.
B Prepare Corn Dog Muffins for oven. Bake for 15-20 minutes.
A Start a stock pot of water boiling. When ready, cook 32 oz of ziti noodles. (Baked Ziti)
A Start 2 Crock pots cooking:

  • White Chicken Chili
B While Corn Dog Muffins are cooking mix and ready for oven the Apple Streusel Muffins.
B When Corn Dog Muffins are done, place them on wire rack for cooling or transfer to a cool cookie sheet for flash freezing.
A Prepare and assemble Baked Ziti – 4 deep dish 8×8 pans.
B Bake Apple Streusel Muffins for 15-18 minutes.
A Cook Ground Beef:

  • 6 lbs of ground beef and set aside the following amounts when you are finished. (If you cooked beef in crock pot, simply saute
    • 4 lbs – Carole’s Chili (Remove and set aside)
    • 2 lbs – Mexican Cornbread Casserole (Remove and set aside)
B While Apple Streusel Muffins are baking, prepare Silver Dollar Pear Pancake batter and ready for griddle.
B When Apple Streusel Muffins are done, set on cooling rack.
B Cook Silver Dollar Pear Pancake. Set on cooling rack or place on cooled cookie sheet for flash freezing when finished.
A With 2 lbs of cooked beef remaining in the skillet, drain. Begin cooking sauce for Mexican Cornbread Casserole. Proceed with preparation and assembly of Mexican Cornbread Casserole4 deep dish 8×8 pans.
A Prepare and assemble Carole’s Chili – 4 gallon freezer bags.
B Once cooled package:

  • Corn Dog Muffins - 4 gallon freezer bags
  • Apple Streusel Muffins - 4 gallon freezer bags
  • Silver Dollar Pear Pancakes - 4 gallon freezer bags
B Cook eggs and prepare Eggwiches.
B Wrap and freeze Eggwiches – 4 gallon freezer bags
A Turn off crock pots and allow contents to cool a bit.
A Cook chicken and assemble Chicken Marsala – 4 quart & 4 deep dish 8×8 pans.
B Prepare and assemble:

  • Deconstructed Broccoli and Cheese Stuffed Chicken Breasts – 4 DD 8×8 pans
  • Chicken & Chilies Casserole – 4 DD 8×8 pans
A Assemble:

  • Black Beans & Brown Rice - 4 8×8 pans.
  • Parmesan-Paprika Pork Chops -4 8×8 pans.
B Assemble:

  • Freezer Beef Stew – 4 gallon freezer bags
  • Ultimate Beef Stroganoff – 4 quart & 4 gallon freezer bags
A Portion:

  • Easy White Chicken Chili - 4 gallon freezer bags
BOTH Kitchen Cleanup!
BOTH Congratulations you are DONE!!!!!

    OK. I just found your site and am contemplating trying it this month. Where are the recipes for these dishes? Is there one page with all the recipes or do I have to find each one individually?

    I have a question about the 20 pounds of chicken breasts on the ingredients list. That is a LOT of chicken. lol
    I thought you were cooking whole chickens. Are you buying bags of boneless skinless chicken breasts and cooking them?

      It IS 20 lbs of boneless chicken breasts – not whole chickens. Follow the instructions carefully for how many pounds to cook ahead of time, how much is needed fresh, and how much can be used frozen.

    Sounds great! But… HELP! Where are the recipes? I saw a recipe page, but it said that those were only the ‘original’ recipes, and on this post, you mention that the recipes have been altered. I’m confused about where I find them. Thanks so much! I’m really excited!

    I just want to make sure I’m understanding correctly (I’m a first timer at OAMC…and I know you’ve broken these steps down so they are very easy to understand, but I think I’m being stubborn)…other than sometimes precooking the meats and veggies, we are not to precook the entire dish – is that correct.

    For example, with this Mexican Cornbread Casserole, when I go to the “original recipe” it has me follow the “assembly” then cook. You instruct me to assemble, but don’t advice me to cook. I assume then that I freeze this with the cornbread uncooked. Is this right?

      You are right, there are very few dishes that we actually cook/bake on our cooking day. If you are suppose to bake it on the day of cooking it will be spelled out in the instructions. But it is definitely good to ask. I hope you will consider joining us for the Tweet-Up in October.
