These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY by yourself! The ingredient quantities can now be found on the VEGETARIAN August 2011 Recipe Cards. If you need assistance understanding this document, please see this post.

Instructions
Night before:
Highly recommended, but not required–prepare
- Steak Strips: Cook rice and lentils on stovetop or in rice cooker. Mix with remaining “beef” ingredients and bake at 300 for 1 hour.Turn oven up to 350. Form steak strips with remaining ingredients.
Sear steak strips in pan for about 3 minutes. Bake in oven for 20-30 minutes, flipping once - Green Salsa: Roast tomatillos at 350 for 25-35 minutes. Cool and food process with remaining ingredients.
- Bacon Strips:Mix bacon loaf and glaze. Place loaf in foil packet and top with half of glaze. Tightly seal. Bake for 45 minutes at 350 and top with remaining glaze. Bake an additional 10 minutes.

What to Do |
| 1 | Ingredients that need CHOPPED (**indicates usually okay for food processor)

| 2 | Start rice cooker(s) for Cheesy Green Bean Skillet. Cook on BROWN RICE setting for full cycle. Add green beans 30 minutes before cycle completion. |
| 3 | Preheat oven to 350. Rhubarb Muffins in oven. Bake at 350 for 12-15 minutes. |
| 4 | While baking Rhubarb Muffins, prepare Bread for Pear & Squash Bruschetta and Zucchini for Zucchini Boats for oven. |
| 6 | When Rhubarb Muffins are done baking, set aside to cool. |
| 7 | Bake Bruschetta and Zucchini for 10 min. Set aside to cool. |
| 8 | Saute 1 cups of DICED onion (per serving) in butter (.5 cups sauteed). Set aside |
| 9 | Turn off Cheesy Green Bean Skillet (rice cooker), stir in cheese, remove lid and allow to cool. |
| 10 | Prepare on Stovetop, Assemble and Freeze:

| 11 | Prepare on Griddle and Freeze:

| 12 | Prepare (no cook), Assemble and Freeze:

| 13 | Mix and freeze 8-can Soup. |
| 14 | Assemble & Freeze:

| 15 | Kitchen Cleanup! |
| 16 | Congratulations you are DONE!!!!! |

It would be wonderful to find a *truly* vegetarian menu for a month–one that didn’t include fake meat.

Jude–I imagine everyone has their own definitions for vegetarian. But all of these “fake meats” are homemade, whole foods versions using ingredients like lentils and brown rice. Calling it mock beef doesn’t make it non-vegetarian to me. Like most recipes, you can adapt them to suit your own needs. Leaving the “meat” out could work for most. Thanks for your comment.
This is amazing. The work that went into this is just great. I am so happy to see a vegetarian and VEGAN set up like this. I will be trying this out soon. Thank you!
