These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY by yourself! The ingredient quantities can now be found on the VEGETARIAN January 2012 Recipe Cards. If you need assistance understanding this document, please see this post.

What to Do
1 Ingredients that need CHOPPED (**indicates usually okay for food processor)

  • See Prep/Chopping Tab on the Menu Recipe Cards
2 Prepare dough for Empanadas and let rise for 90 minutes.After 30-minute soaking process, start 5 to 6-quart slow cooker(s) for Blueberry French Toast. Cook on LOW for 3-4 hours.

Start 4-quart slow cooker(s) for Falafel and cook on HIGH for 3-4 hours.

3 Prepare and place vegetables in oven for Fire Roasted Vegetable Pasta. Bake at 400 for 20 minutes.
4 While baking Fire Roasted vegetables, prepare vegetables for Tomato Soup for oven.
6 When Fire Roasted Vegetables are done baking, set aside to cool. Turn the oven up to 450 degrees. Meanwhile, mix liquids and spices for Fire Roasted Vegetable Pasta and combine with vegetables. Set aside.
Bake vegetables for Tomato Soup for 10 minutes.
7 While vegetables for Tomato Soup are baking, prepare Mini Quiches for oven.
When vegetables for Tomato Soup are done baking, set aside to use in Tomato Soup Recipe. Bake Mini Quiches for 15-18 min.
8 While Mini Quiches are baking, prepare Tomato Soup on stovetop and set aside to cool. When Mini Quiches are done baking, set aside to cool and turn off oven.
9 Turn off Falafel (slow cooker), remove lid and allow to cool.
10 Prepare Asparagus for Asparagus Risotto recipe on stovetop. When done place remaining ingredients in Rice Cooker. Place Asparagus in Steamer Tray and cook on “White Rice” setting. When cycle is complete, puree about half of asparagus with an immersion blender and mix into rice. Then mix remaining asparagus in (still in 1-inch pieces).Set aside to cool.
11 Turn off Blueberry French Toast (slow cooker), remove lid and allow to cool.
12 Prepare on stovetop and cool:

  • Breakfast Quinoa
  • Rice Balls
  • Black Bean Salsa Quesadillas
13 Grill and flash freeze: Grilled Polenta Cakes
14 Prepare on stovetop:

  • Prepare Lasagna sauce on stovetop. Assemble Lasagna.
  • Prepare salsa for Spicy Lentil Tacos on stovetop. Food process salsa. Mix “beef” and seasoning for Spicy Lentil Tacos. Set aside to cool.
  • Prepare Empanadas filling on stovetop, set aside to cool.
15 Mix or Assemble:

  • Mix Zucchini Fritters batter
  • Assemble flash freeze Buffalo “Chicken” Bagel Pizzas
  • Assemble and flash freeze Empanadas
16 Package and Freeze:

  • Blueberry French Toast
  • Falafel
  • Fire Roasted Vegetable Pasta
  • Tomato Soup
  • Mini Quiches
  • Asparagus Risotto
  • Breakfast Quinoa
  • Rice Balls
  • Grilled Polenta Cakes
  • Black Bean Salsa Quesadillas
  • Spicy Lentil Tacos
  • Lasagna
  • Zucchini Fritters
  • Buffalo “Chicken” Bagel Pizzas
  • Empanadas

    It seems that these instructions are for the wrong month?!? Yes, it’s only January 1st, just eager to start planning!
