These are the step-by-step instructions you will need to quickly and efficiently approach your once a month (OAMC) BIG DAY by yourself! The ingredient quantities can now be found on the VEGETARIAN July 2011 Recipe Cards. If you need assistance understanding this document, please see this post.

What to Do
1 Ingredients that need CHOPPED (**indicates usually okay for food processor

  • See Prep/Chopping Tab on the Menu Recipe Cards
2 Start rice cooker(s) for Green Chile Rice Casserole, Farro & Millet Risotto and Asparagus Risotto recipes. Cook on WHITE RICE setting for full cycle. If you have a single rice cooker, start one, complete cycle. Rinse and start the next. Repeating for the third recipe.
3 Prepare and place Blueberry Muffins in oven for Blueberry Muffins. Bake at 350 for 35 minutes.
4 While baking Blueberry Muffins, prepare Bagels for oven.
6 When Muffins are done baking, set aside to cool. Turn oven up to 425.
Bake Bagels for 20 min, flipping once
7 While Bagels are baking, prepare Tomatoes for Tomato Soup recipe for oven.
When Bagels are done baking, set aside. Bake Tomatoes for 15 min.
8 While Tomatoes are baking, prepare Tomato Soup, adding roasted tomatoes when read.
9 Saute .75 medium onion .75 cups of DICED onion in butter (.375 cups sauteed). Set aside 

  • .25 cups diced, raw = .125 cup sauteed (Curry Tofu Breakfast Quesadilla)
  • .50 cups diced, raw = .25 cups sauteed (BBQ Seitan Burritos)
10 Saute 2 cloves of MINCED garlic in butter. Set aside 

  • 2 cloves minced (Curry Tofu Breakfast Quesadilla)
11 Saute 1 medium bell peppers, chopped, in butter. Set aside 

  • .5 bell peppers sauteed (BBQ Seitan Burritos)
12 Turn off Green Chile Rice, Asparagus Risotto and Farro & Millet Risotto (rice cooker), remove lids and allow to cool.
13 Prepare on Stovetop, Mix & Assemble: 

  • Curried Tofu Breakfast Quesadillas
  • BBQ Seitan Portabella Burritos
  • Spicy Lentil Tacos (stovetop only for salsa)
  • Asparagus & Chickpea Casserole
  • Pad Thai
14 Mix & Assemble: 

  • Asparagus & Chickpea Casserole
  • Pad Thai
15 Mix, Assemble & Freeze: 

  • Tofu O’ The Sea
  • Buffalo Chicken Bagel Pizzas
  • Green Bean Chicken Casserole
  • Lasagna
  • Sushi Salad
16 Package: 

  • Asparagus & Chickpea Casserole
  • Pad Thai
  • Blueberry Muffins
  • Bagels
  • Tomato Soup
  • Farro & Millet Risotto
  • Asparagus Risotto
  • Green Chile Rice Casserole
  • Curried Tofu Breakfast Quesadillas
  • BBQ Seitan Portabella Burritos
  • Spicy Lentil Tacos
