Jerk Pineapple Pork Chops and Cilantro Lime Rice
Originally, this was just a recipe post about Jerk Pineapple Pork Chops. I had a great story to tell y’all about my fantastic new cast iron skillet my dad just bought me. That will have to wait because all I can think about right now is this rice. The cilantro lime rice turned out to be the shining star of this entire meal. Rice is a staple in my house, both growing up and now. I can’t tell you why I’ve never made cilantro lime rice before, but I can tell you that I may never eat plain rice again. The sugar in the sauce gives it just a hint of sweetness and personally, I don’t think you can add too much cilantro. I could go on and on about the rice, but really, you should just try it yourself and let me know what you think.
Jerk Pineapple Pork Chops

Ingredients:
- 1.5 pounds boneless pork chops
- 12 ounces pineapple chunks, undrained
- 1 cup green onions, chopped
- 1-2 medium jalapenos, de-seeded and diced (I like things hot so I did two but kid friendly would be one)
- 2 teaspoon thyme
- 4 teaspoon garlic, minced
- 0.5 teaspoon cumin
- 0.5 teaspoon salt
- 1 teaspoon black pepper
- 2 Tablespoon olive oil
Directions:
Combine all ingredients except olive oil in a gallon freezer bag and allow to marinate for at least 30 minutes (the longer, the better). Heat olive oil in a large skillet over medium heat. Remove pork chops and pineapples from marinade and place into skillet, turning to make sure both sides brown. Add marinade to skillet in small amounts to keep pork moist. Cook for 10-12 minutes until pork chops are cooked through. Serve with cilantro lime rice (see recipe below).
Freezing Directions:
Combine all ingredients except olive oil in a gallon freezer bag, label and freeze. To serve: thaw in fridge. Heat olive oil in a large skillet over medium heat. Remove pork chops and pineapples from marinade and place into skillet, turning to make sure both sides brown. Add marinade to skillet in small amounts to keep pork moist. Cilantro Lime Rice

Ingredients:
- 1 cup long grain white rice
- 1 teaspoon butter
- 2 teaspoons garlic, minced
- 2 teaspoons lime juice #1
- 15 ounces chicken broth
- 1 cup water
- 1 Tablespoon lime juice #2
- 2 teaspoons sugar
- 4 Tablespoon cilantro, chopped
Directions:
Over medium high heat, combine rice, butter, garlic, lime juice #1, chicken broth, and water in a saucepan. Bring to a boil, then cover and cook for 12-15 minutes until rice is tender. While rice is cooking, stir together lime juice #2, sugar, and cilantro in a small bowl. Remove rice from heat once done cooking and stir in cilantro mix. Fluff with a fork.
Freezing Directions:
Prepare as above and allow to cool. Place in a freezer bag, label, and freeze. To serve: thaw in fridge. Reheat in microwave for 1-2 minutes until warmed through.

What is lime juice #1 and lime juice #2?
That is a reference to when they are added in the recipe directions, not a type of lime juice.
Your Cilantro Lime Rice sounds great! How do you think it would work with brown rice?
I think it would be great with brown rice!
