July Instructions – Allergies
Please note that all recipes in this document have been altered (increased quantities) to meet the needs of TWO people participating in a Once A Month Cooking (OAMC) Day. It is indicated on each recipe whether it has been doubled or quadrupled for your convenience. If you are just one person or would like to make less of a particular recipe, you will need to make the adjustments on your own to the recipe and to the grocery shopping list.
- 5 pounds of chicken will be cooked in the crockpot, it does not need to be thawed before cooking. 8 pounds will be used for Spicy Honey Chicken and it can be placed directly in the bags frozen, add sauce and stick back in freezer.
- 6 pounds of beef (Mom’s Enchiladas, Ground Beef Casserole II) This meat can be frozen because we are cooking it before freezing again.
- Put 5 lbs of chicken into a crock pot, add 1 cup of water and cook for approximately 8 hours on low or until chicken is done.
- Optional (but HIGHLY recommended) – chop up all vegetables, cook 2 cups rice (Chicken Rice Casserole), cook & chop bacon – 1 pound (Monterrey Chicken Quesadillas)
||What to Do
|A||Ingredients that need CHOPPED (**indicates usually okay for food processor)
|B||Preheat oven to 375 degrees.|
|B||Cook Bacon on cookie sheet for 30-45 minutes or until cooked through. (Monterrey Chicken Quesadillas) **Skip if you did this the night before – and give yourself (or your cooking partner) a pat on the back while you are at it.|
|A||Start a stock pot of water boiling. When ready, cook 40 oz of elbow macaroni (use 2 stockpots if you need to).|
|A||Start Crock pots cooking Slow Cooker Baked Bean Soup.|
|B||While bacon is cooking mix and ready for oven the Raspberry Coffee Cakes.|
|B||Bake Raspberry Coffee Cakes for 35-40 minutes.|
|A||Cook Ground Beef:
|A||Using the beef skillet (don’t clean it) cook the green and red pepper in heated olive oil, add the garlic as suggested. When finished add cooked ground beef and proceed with preparation and assembly of Ground Beef Casserole II - 4 DD 8×8 pans.|
|A||Assemble Mom’s Enchiladas – 4 8×8 pans.|
|B||While Raspberry Coffee Cakes are cooling, make glaze and apply (this step is OPTIONAL, these coffee cakes are great without the glaze too). Allow glaze to harden before covering with foil and freezing.|
|B||Mix batter for Baked Corn Dogs while Raspberry Coffee Cakes are baking. Place them on cookie sheet and ready them for oven.|
|B||Bake Baked Corn Dogs for 20 minutes or until golden brown.|
|B||Allow Baked Corn Dogs to cool and then divide among freezer bags and freeze.|
|A||Prepare and assemble Monterrey Chicken Quesadillas – 4 quart & 4 gallon freezer bags|
|B||Turn off Slow Cooker Baked Bean Soup and allow to cool.|
|A||Prepare and assemble Sausage & Gravy - 4 gallon freezer bags.|
|B||Prepare and package Breakfast Smoothies – 4 quart & 4 gallon freezer bags.|
|A||Prepare and assemble Pioneer Woman’s Pasta Primavera – 4 gallon freezer bags.|
|B||Prepare and assemble:
|A||Assemble Spicy Honey Chicken – 4 gallon freezer bags.|
|B||Prepare an assemble Chicken Cacciatore – 4 quart & 4 gallon freezer bags.|
|B||Blend part of Slow Cooker Baked Bean Soup (see instructions) and portion into 4 gallon freezer bags.|
|BOTH||Congratulations you are DONE!!!!!|
