Kid Friendly Chicken and Broccoli Quesadilla
At our house, tortillas are a pantry staple. They are so versatile, and are always great for a meal or snack in a pinch. From plain jane cheese quesadillas, to fruity breakfast burritos, to peanut butter and banana roll ups…the possibilities are endless. I am always looking for creative ways to use tortillas that are both nutritional and kid-pleasing. The combination of chicken, broccoli and cheddar cheese were an immediate hit at our table, and are now included in the kids “must haves” stock in the freezer. Cutting in strips makes quesadillas easier to eat for the younger crowd, and adding onions for more flavor is great for the older eaters.
Chicken and Broccoli Quesadilla

Ingredients:
- 4 small flour tortillas
- 1 cup chicken, cooked and shredded
- 1 cup broccoli, diced
- 1 cup cheddar cheese, shredded
Directions:
Heat a non-stick skillet over medium heat. Place one tortilla in skillet, topping with 1/2 cup chicken, 1/2 cup broccoli and 1/2 cup of cheese. Top with another tortilla. Allow cheese to melt, then flip to cook the other side. Cut into finger size strips and serve.
Freezing Directions:
Follow directions above. Cool completely. Transfer tortilla strips to a gallon sized freezer storage bag. Label and freeze. TO SERVE: Do not thaw. Remove desired number of quesadilla strips from freezer. Reheat in microwave 15-25 seconds per strip, or until heated through.

Any ideas how I could pack these in lunchboxes??

I would just pack them in the lunch box frozen – then they would thaw by lunch time. As long as your kids will eat them cold I think it would work great!
I made these without the chicken and added tomatoes. So, they were broccoli, tomato and cheese quesadillas. I also gave my son salsa to dip them in. Because, you know, dipping is almost getting to play with their food.
