Lemon Caper Tilapia Packets
Tilapia has to be one of the mildest fish out there. And it’s a staple here in our house. Remember my post with Anderson Seafoods? Well it helped us really shoot for our goal to try and eat fish more often at least once a week. Although our budget doesn’t always agree, we’ve made do. My Mom and Aunt came across this recipe a long time ago and I’ve tweaked it somewhat and I will say it changes every time I make it depending on what we feel like and what we have on hand. I hope that you enjoy it as well!
Tilapia Packets

Ingredients:
- 1 pound Tilapia, fresh
- 1 cup Tomatoes, diced
- 1 tablespoon Capers
- 1 medium Garlic clove, minced
- 1/4 cups Olive Oil
- 1 medium Lemon, juiced
Directions:
Distribute one tilapia filet per foil square. Lift up the edges, divide remaining ingredients equally among the filets. Roll foil edges together tightly to form a packet. Bake at 375 for 10-15 minutes until fish is firm.
Freezing Directions:
Distribute one tilapia filet per foil square. Lift up the edges, divide remaining ingredients equally among the filets. Roll foil edges together tightly to form a packet. Place flat into freezer bag and freeze until ready to serve. TO SERVE Thaw, bake at 375 for 15-20 minutes until fish is firm.

Do you have to thaw the packet? Has anyone tried baking it from a frozen state?
You can cook from frozen, it just may take a little bit longer. I’ve done it in a pinch in the past.
