Light Lemon Chicken with Broccoli

Here is a simple meal great for any evening.  Chicken is cooked and tossed with broccoli and red pepper cooked in chicken stock then tossed with lemon juice, lemon zest and parsley.

Light Lemon Chicken with Broccoli

Ingredients:

  • 1 Tablespoons flour
  • 0.25 teaspoons salt
  • 0.75 pounds boneless, skinless chicken breasts, sliced in thin strips
  • 1.5 cups chicken broth
  • 2 teaspoons garlic, minced
  • 2.5 cups broccoli florets
  • 0.5 cup red pepper, sliced
  • 2 teaspoons lemon zest
  • 6 Tablespoons chopped fresh flat-leaf parsley
  • 3 Tablespoons fresh lemon juice

Directions:

Coat the chicken slices with flour and salt.  Heat a large skillet and brown the chicken, about 5 minutes.  Remove chicken.  Add chicken broth to skillet.  Bring to a boil over high heat.  Add broccoli.  Cover.  Cook 2 minutes.  Add red pepper.  Cook an additional 1-2 minutes.  Remove from the heat.  Add chicken and remaining ingredients.  Proceed to freezing instructions.  

Freezing Directions:

After cooling, place in gallon size freezer bags and freeze.  To serve.  Thaw and reheat on the stovetop or microwave.
