Lighter Buffalo Turkey Lettuce Wraps

Are you a fan of buffalo sauce?  But not a fan of all the butter in buffalo sauce?  Me too!  Buffalo chicken wraps are a regular in our household but with all the butter in the sauce, there had to be a better way.  This is a great recipe with no butter but still lots of flavor.  In addition, lettuce wraps are a great healthy way to have a fun meal without extra carbs and calories.

Lighter Buffalo Turkey Lettuce Wraps

Ingredients:

  • 1 pound lean ground turkey
  • 1 cup carrots, chopped or grated
  • 1 cup celery, chopped
  • 1 cups onion, chopped
  • 2 teaspoons garlic, chopped
  • 1 Tbsp red wine vinegar
  • 1 Tbsp brown sugar
  • 0.5 Tbsp Worcestershire sauce
  • 2 Tbsp hot sauce
  • 0.5 cup tomato sauce
  • 0.5 cup chicken broth (homemade or low sodium canned)

Directions:

In a large skillet, brown the ground turkey along with the carrots, celery, onion and garlic.  Meanwhile, in a small bowl, mix remaining ingredients for the sauce.  Add sauce to meat mixture and bring to a boil.  Reduce to a simmer and cook for 7-10 minutes until most of the sauce has been absorbed.  

Freezing Directions:

Allow to cool.  Divide each serving into indicated number of pint size freezer bags.  To serve: Thaw, heat through and serve on iceburg lettuce leaves.  If desired, sprinkle with cheese.

    Sorry if this is a bit of a random place for this question.

    I’m planning to do the April Diet menu but I’m not big on buffalo sauce so I’m substituting out Asian seasonings from another recipe I found.

    I saw one recipe that calls for cabbage and some people mentioned freezing it. I do like cabbage and would like to have as many vegies as I can. Do you think cabbage will freeze ok if it is sauteed first with the turkey/chicken?

      I’ve frozen cabbage in the form of cabbage rolls and it freezes OK. If you are thinking of using sauteed shredded cabbage, I think it will be OK, although the texture of it will change somewhat after freezing.
