Light, fresh Thai-inspired chicken wraps with a peanut sauce filled with cabbage, carrots and cucumber. A perfect meal for a hot summer day.
Lighter Thai Inspired Chicken Wraps

Ingredients:
- 2 whole wheat tortillas/wraps
- 6 ounces boneless, skinless chicken breasts
- 1 cup shredded cabbage
- 0.25 cup shredded carrots
- 0.25 cup diced cucumbers
- 1.5 Tablespoon natural peanut butter
- 1 teaspoon soy sauce
- 0.5 teaspoon lime juice
- 0.25 teaspoon sesame oil
- 0.125 teaspoon ground ginger
Directions:
Grill or cook the chicken. Slice or shred the cooked chicken. In a small bowl, combine the peanut butter, soy sauce, lime juice, sesame oil and ginger. In a large bowl, combine the chicken, cabbage, carrots and cucumber. Spread sauce onto wraps and top with chicken, cabbage, carrots and cucumber. Divide among tortillas and roll up into wraps. Serve immediately or proceed to freezing directions.
Freezing Directions:
Wrap individually in foil and place in gallon size freezer bags. To serve, thaw and reheat.

I’m very new to this. How does the cucumber hold up to the freezing/thawing/reheating process?
The texture will change so if that is an issue for you, you may want to leave them out or add them on the serving day.
Is there a missing ingredient in the peanut sauce? I followed the listed proportions and ended up with a very solid “dressing”. I added some rice vinegar which fixed the problem.
The original sauce proportions were correct but I modified the instructions to spread the sauce on the wraps instead of combining with the other ingredients like a dressing as it was originally written because you are correct, it is thicker than a dressing. I’m sure your method worked very well though too! Thanks for the feedback.
What works instead of peanut butter? I have nut allergies but this looks yummy!!
Perhaps you could try a Thai Sweet Chili sauce instead of a peanut sauce? The wrap itself is pretty basic so any type of sauce you enjoy could likely be used.
These were a perfect fit for dinner tonight, since I had leftover grilled chicken breast and alot of cabbage and cucumbers from my Farm Share. They were good, I ate them cold, the directions talk about reheating, but since nothing I had was hot to begin with, that didn’t seem to apply. I subbed “Better N Peanut Butter” for regular peanut butter, worked fine. But I did want more sauce than what was allotted, so I doubled the amounts. Taking the leftovers to lunch tomorrow, without a wrap, as salad!
I loved these fresh, but I have not been a huge fan when thawed/reheated.
