Little Monkey Bread Bites

In our house, this is a common response when I ask the little ones what they would like for snack. Followed promptly by monkey/ape sounds and under armpit monkey motions. For several years I made this snack in a loaf pan , or even in a 9×13 baking dish. But as I because more obsessed with having a stock of quick snacks and meals in my freezer for my growing brood, I converted the recipe to bite size snacks that would be readily and easily accessible anytime from my freezer. Using a halloween safe cutter knife, my little kitchen helpers get to enjoy both the prep and the eating of this snack!Monkey Bread! Monkey Bread! Monkey Bread!!!
Monkey Bread Bites

Ingredients:
- 2 cans refrigerated biscuits (10 biscuits per can)
- .25 cups of sugar
- 1 Tbsp cinnamon
Directions:
Preheat oven to 350F. Grease muffin tin. Combine cinnamon and sugar in shallow bowl. Cut each biscuit into 4 small pieces. Roll biscuit pieces in cinnamon/sugar mix until completely coated. Place approximately 6-7 pieces int each muffin tin. Bake 15-20 minutes or just until tops get firm.
Freezing Directions:
Follow directions above. Cool bites completely and transfer to a gallon freezer bag. TO SERVE: Microwave from frozen state 45-60 seconds until warm.

when do you use the butter?

Recipe is updated to reflect using no butter. I use it when I am making a big loaf pan recipe – but not the mini ones! Sorry for the mix up!

What kind of biscuits? Buttermilk?
Nicole- Yes I just use the small buttermilk biscuits – not the big flaky kind!
what are fridge biscuits – not sure if we have these in Australia?

Refrigerator biscuits are found in your grocers dairy section, with the crescent rolls and cinnamon rolls. They come in a tube, normally with 10 per tube. I made these for my daughter a few days back and just took one out of the freezer and heated it up for her. It was pretty hard and tough. I didn’t cook them too long so I’m not sure if this is normal? Would rolling the small pieces in melted butter before the cinnamon sugar make it a little softer?
I have never had them warm up too hard or tough. Depending on your microwave power, you may have cooked them too long? I would try to decrease the time, and possibly even the power to see if that works!
