Luscious Heavenly Chocolate Bars
Need a dessert to show your family you really love them on Valentine’s Day? These are truly a chocolate lovers Heaven in one single bite! And if you can only eat one bite, kudos to you, because I ate 1/2 the pan. The bottom layer is chocolate chip cookie, topped by Oreo cookies, followed by a brownie layer. Because of my love of all things Ghiradelli, I chose to make the chocolate chip cookie layer using Ghiradelli Milk Chocolate chips and following the cookie recipe on the bag, as well as using a Ghiradelli brownie mix. Depending on your baking desires, you can do as much work or as little as you want. You can make your cookie dough from scratch, using your favorite recipe, or use the Betty Crocker pouch mix, or even the refrigerated cookie dough. The same goes for the brownie layer…it’s totally up to you. I will say – using the Ghiradelli made it so yummy. The taste of their chocolate chips are like no other. The Oreo Cookies between the layers of Ghiradelli may seem a little odd, but do not fear, they lend a flavor to the center layer that is unrivaled by any other cookie.
While these are best served warm, right from the oven, with a scoop of vanilla ice cream, my family enjoyed them all day. My preference was to pop them back into the microwave for about 10 seconds….there is just something about warm melty chocolate that soothes my soul!
Luscious Heavenly Chocolate Bars

Ingredients:
- 1 brownie mix
- 1 container of oreo cookie
- 1 pouch chocolate chip cookie mix, or make your favorite chocolate chip cookie recipe
Directions:
Preheat oven to 350 degrees. Line a 9×13 glass baking dish with parchment paper. Prepare chocolate chip cookie according to package directions or prepare your favorite chocolate chip cookie recipe. Spread cookie dough atop parchment paper in baking pan. Place a layer of oreo cookies on top of cookie dough, pressing each cookie firmly into dough. Prepare brownie mix according to package directions and pour onto of cookie dough/oreo layer. Bake for 30 minutes. Cool slightly and transfer parchment paper with baked bars onto a cutting board. Cut into chunks, bars, or just dig in with a fork.
Freezing Directions:
Flash freeze cut brownies, transfer to freezer bag . Label and freeze up to 3 months. TO SERVE: Thaw on counter top for 20 minutes. Microwave 15 seconds if you desire a warm brownie.
