Mama’s Meatballs and Gravy

When my grandma was a newlywed she learned to cook for her new husband by experimenting with recipes she clipped from the newspaper. These simple meatballs was one of those recipes and became a family favorite to her six children. The recipe was eventually passed to my mom who made it often when I was growing up, and it’s now often requested by my own kids. There is nothing really secret or gourmet about this meaty casserole, it’s just an inexpensive, simple, comfort meal that’s continued to fill bellies for four generations.

Mama’s Meatballs and Gravy

Ingredients:

  • 1 pound ground beef
  • 0.75 cup bread crumbs
  • 0.75 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 2 eggs

Gravy:

  • 10.5 ounces cream of chicken soup
  • 0.5 cup milk

Directions:

Mix raw ground beef, bread crumbs, milk, seasonings, and egg and form into small balls. Bake on a cookie sheet at 350F for 10-15 minutes or until no longer pink inside. Place meatballs in an 8×8 baking dish. Mix soup and milk for gravy. Pour over meatballs. Bake covered at 350F for 30 minutes. Uncover, and bake 10 minutes longer. Serve meatballs and gravy over mashed potatoes or rice, if desired.

Freezing Directions:

Mix raw ground beef, bread crumbs, milk, seasonings, and egg and form into small balls. Bake on a cookie sheet at 350F for 10-15 minutes or until no longer pink inside. Place meatballs in an 8×8 baking dish. Mix soup and milk for gravy. Pour over meatballs. Cover with foil, seal, label, and freeze. To serve: Bake covered at 350F for 1 hour (no need to thaw). Uncover, and bake 10 minutes longer. Serve meatballs and gravy over mashed potatoes or rice, if desired.

    Very good! My whole family LOVED it! I doubled the recipe and we ate some tonight and then put 3 8×8′s in the freezer, but I added egg noodles to each pan.
